Mysore Masala Dosa Recipe - Authentic Karnataka Recipes

Mysore Masala Dosa is an Classic Karnataka Breakfast Recipe. Dosa's  are Crisp at outside, and spongy inside, Spread with hot Red chutney as one layer  & Potato filling in another layer,makes the dosa, hot & Spicy. Dosa filling with  Hot chutney,with a dollop of butter, when blended with mild potatoes tastes awesome.Coconut Chutney is a Perfect Accompaniment for this Dosa.when you go for Karnataka Restaurants,never miss this yummy Dosa. 




Mysore Masala Dosa 

 Prep Time : 4 hrs Soaking + 9 hrs Fermentation. 
Cook Time : 3 - 4 minutes per dosa.

serves  :   4 .   

Ingredients for Dosa Batter

Idli Rice - 1 cup.
Raw Rice - 1 cup.
Urad dal - 1/2 cup.
Poha(avalakki) - 1/2 cup.
Chana dal - 1/4 cup.
Toor dal - 1/4 cup.
Methi seeds - 1 tsp.
salt - as Needed.


Ingredients for Red Chutney

Fried Gram - 1/4 cup.
Shallots - 10.
Garlic - 6.
Red chillies - 7.
Tamarind - small piece.
salt - Needed.
oil - to fry.

Ingredients for Potato Masala

Potatoes(big) - 3.
Onions(big) - 3, or chopped onions - 1 cup.
Green chillies - 2.
Cashews - 15.
Ginger - 1 inch(chopped finely)
curry leaves - 1 sprig.
salt - to taste.
oil - to fry.
water - 1/3 cup.
Turmeric - 1/4 tsp.
cilantro - for Garnishing.

To Temper

Mustard seeds - 1 tsp.
urad dal - 2 tsp.
chana dal - 2 tsp.




Preparation of  Dosa Batter

Soak  Idli Rice,Raw Rice,urad dal,chana dal,Toor dal,methi seeds for 5 hrs, or overnight with needed water.  just wash and add Poha, while grinding. Then Grind everything into smooth paste,with needed water & salt in a wet Grinder.Allow it to ferment for 7 - 8 hrs,or overnight.Let the consistency of batter be dosa batter consistency.

Method

Preparation of Hot Red Chutney

  • Heat the kadai, add 1 tsp of oil,  add Red chillies & tamarind, saute  for 2 - 3 minutes.Then add shallots,Garlic, saute till shallots turns light Golden brown colour, then add Fried Gram mix well. 
  • Switch off the flame. Grind everything into a smooth Paste with needed water & salt.Now Red chutney is Ready.

Preparation of Potato Masala
  • Cook the potatoes for 3 whistles, then remove the skin, & mash it well.
  • Heat the oil, add mustard seeds when it splutters, add urad dal,chana dal  cashews & curry leaves, saute till dals turns golden brown.

  • Add onions, Ginger and Green chillies. Saute till onions turns slightly  golden brown.
  • Then add 1/3 cup of water, needed salt and 1/4 tsp of turmeric.When water starts boiling add mashed potatoes, saute for few seconds till water is absorbed, and it becomes a thick curry.

  • Garnish with fresh cilantro.Now Potato curry is Ready.
Dosa Preparation
  • Heat the tawa, spread the dosa. Drizzle some oil.
  • When dosa is half cooked, spoon it with 1 tbsp of  Red chutney.Spread the chutney over the dosa, evenly, as shown in the Picture.
  • Then add  butter, and spread evenly.(optional)
  • Finally top with 3 tbsp of Potato Masala, slightly spread the Masala, and Fold the Dosa.
  • Don't flip the Dosa.Serve hot with Coconut Chutney or Sambar.



Notes
  • Always use wet Grinder, for Good Results.
  • Taste of Masala dosa depends on  Red chutney.I made the Red chutney with Hot & Spicy. if you want less spiciness, reduce the no of Red chillies. 
  • Adding Ginger gives nice flavour to Masala.
  • Make the masala, as little thick curry,than dry, for good Taste.
  • Adding butter is optional, if you want nice crispy browning texture, add butter.
  • Coconut Chutney is an apt combination for this Dosa.

Milagu Adai - Milagu Jeeraga Adai (with Samai Rice) - Karthigai Deepam Recipes

Milagu Adai is made with Raw Rice, dals, crushed Pepper & cumin seeds.But i  used Samai Rice (Little Millets) to make this Milagu Adai. (other Names:Hindi: Kutki; Tamil: Samai; Telugu: Sama; Kannada: Same; Malayalam: Chama).Milagu Adai is a Special Recipe, made during Karthigai Deepam. I have used millets so it is healthy too.It is an Easy & Healthy break fast or Dinner Recipe.Crushed Cumin & Pepper Corns,when blended with Rice & dal's, tastes Good.Now we learn to make this Adai.


Ingredients

Samai Rice - 2 cup.
Poha/aval/avalakki - 1/2 cup.
Coconut - 1/2 cup.
chana dal - 2 tbsp.
Toor dal - 2 tbsp.
Cumin seeds - 1 tsp.
Pepper Corns - 2 tsp.
salt - to taste.
oil - to smear.

Preparation

  • Crush the Cumin seeds & Pepper corns to a coarse Powder.
  • Grate the coconut and keep it aside.



Method
  • Soak Samai Rice,Poha,chana dal,Toor dal,  in a needed water for 1 hour.
  • Then Grind it, into a little coarse Paste, with needed water & Salt.


  • Add Crushed Pepper corns + Jeera Powder.Add Grated Coconut.Mix well.Let the consistency be little  thicker than Normal Dosa batter consistency.
  • Heat the tawa, when it is hot take ladle full of batter, & spread lightly to make thick Adai. Drizzle some oil.
  • Flip the Adai, when both sides are cooked Remove from tawa.

Notes
  • I used Little Millets(Samai) to make this Adai. you can use any other millets like Varagu,Thinai or kuthiraivali Rice.
  • Adding Rice  Gives softness to Adai.
  • Instead of poha you can add one cup of  cooked rice also.
  • you can serve this adai with butter or Honey.

Easy Moong Dal Tadka - How to Make Moong dal Tadka

Moong Dal Tadka is a  Popular North Indian Dal recipe,made with Moong dal, onions & tomatoes,tempered with cumin seeds,fennel seeds & Garlic. It goes well with Chapathi,roti,Jeera Rice,Rice & Mild Pulao's.In my home,my mom often make this for chapathi's.  Yellow moong dal is extremely light and easy to digest. It can be eaten by those who are ill without any second thought. It is good source of protein and dietary fiber.Now, we learn to make Easy Protein & Fiber Rich Moong Dal Tadka.



Moong Dal Tadka

 Prep Time : 10  min. 
Cook Time : 25  minutes .

Ingredients

Moong Dal -  1/2 cup.
Onions - 2.
Tomato - 1(big).
Green chillies - 3.
Ginger - 1/2 inch.
Turmeric - a Generous Pinch.
Salt - to taste.

For Tadka

Butter/Ghee/Oil  - 1 tbsp.
Cumin seeds - 1/2 tsp.
Fennel seeds - 1/2 tsp.
Garlic - 4.
Red chillies - 1.
Garam Masala - 1/2 tsp.




Preparation


  • Chop the onions,tomatoes, Green chillies & Ginger, finely.
  • Chop the Garlic,lengthwise,for Tadka.

Method
  • Saute the Moong dal, till u get nice Aroma.
  • Then add chopped onions,tomatoes,Ginger & turmeric powder to it. Then add 2 cups of water and pressure cook for 6 whistles.

  • When pressure subsides open the lid, mash the dal well, till it gets creamy consistency.Then add 1 cup of water & needed salt.Mix well. Then switch on the stove, and simmer it for 3 - 4 minutes. 

  • In a Mean while, heat the butter,when it melts, add cumin seeds,fennel seeds, when it sizzles add Red chilly and Garlic.
  • When Garlic turns light Golden brown colour, add Garam masala and switch off the flame.
  • Mix well, Garam masala, gets cooked in the heat of the it.Pour the Tadka over the dal, & switch off the flame.

  • Serve hot with Roti's,Chapathi's, Jeera Rice & Mild Pulao's.
Notes
  • Sauting the Moong dal gives, nice aroma to dal.
  • Always pressure cook the dal, to get creamy texture.
  • Adding fennel seeds gives nice flavour to Tadka.
  • After adding Garam masala, switch off the flame, else Garam masala may burnt.
  • Adding Red chillies gives spicy taste to Tadka.

Potato Stir Fry - Spicy Aloo fry - Potato Roast

Potato Stir fry is an Easy and Yummy Side Dish Recipe made with boiled Potatoes and some Spice Powders. It  Goes well with Chapathi,Roti, Rice,  Rasam rice, Dhal rice  and Mild Pulao's. I learnt this recipe from one of my Grand mother. Potatoes have high level of carbohydrates  helps maintain good levels of glucose in the blood, which is necessary to proper brain functioning. Potatoes are packed with powerful nutrients and antioxidants—compounds, which are Good for health.Now we learn to make Pototo Stir fry.


Ingredients

Potato - 3 (Medium Size).
Onion - 2.
Green chillies - 1(slit into 2).
Corainder leaves - 2 tbsp(chopped)
Ginger Garlic Paste - 1 tsp.
oil - to fry.
Salt  - to taste

Spice Powders

Coriander Powder - 1 tsp.
Chilli Powder - 1 tsp.
Turmeric Powder - 1/4 tsp.
Garam Masala - 1/2 tsp.

To Temper

Mustard Seeds - 1/2 tsp.
Fennel Seeds - 1/2 tsp.


Preparation
  • Pressure Cook the Potatoes for 3 whistles, then remove the skin of Potatoes and chop the potatoes into cubes.
  • Cut the onions length wise.

Method
  • Heat the oil, add mustard seeds, when it splutters add fennel seeds.
  • When it sizzles,add slit Green chilles, saute till it turns pale.
  • Then  add chopped onions, &  add Ginger garlic Paste.

  • Saute till onions turns golden brown colour.
  • Then add all spice Powders, such as coriander Powder,chilli powder,turmeric Powder, Garam Masala Powder and then add salt and mix well, and saute for a minute.

  • Then add Cubed Pototoes and mix Gently.
  • Saute for 5  minutes in a medium low flame till masala's are well blended with Potatoes.
  • Finally Garnish with fresh coriander leaves.

Notes
  • Adding Fennel seeds,gives nice flavour to Potato stir fry.
  • Don't saute spice powders for longer time, else Powders become dark.
  • After adding cubed potatoes mix it  gently else, there might be a chances of breaking potatoes.
  • you can also add 1/2 tsp of cumin powder,while adding other spice powders.

Ragi Idiyappam - Ragi Sevai - Finger Millet String Hoppers

Ragi Idiyappam is a healthy and filling breakfast Recipe, made with Ragi flour and little Rice flour. Ragi contains high amount of calcium which can be the key factor for bone development.If you consume ragi regularly then you can control diabetes.Ragi helps to improve hemoglobin level of your body so that it can be the great choice for new mothers. They can add ragi in their diet to increase the milk production to feed their babies and it will enrich the milk with vital amino acids, calcium and iron.Today we will learn to make Ragi Idiyappam. 






Ragi Idiyappam

 Prep Time : 10  min. 
Cook Time : 10 -12  minutes per batch.

Ingredients

Sprouted Ragi flour/Ragi flour   - 3/4 cup.
Rice flour - 1/4 cup.
water - 1 + 1/2 cups. (Approximately)
salt - As needed.


Method

  • Dry Roast the Ragi flour, in a kadai for 4 - 5 minutes, till you get nice aroma. In a mean time, heat water,(1 + 1/2 cups app) and bring it to a rolling boil. 
  • After you got nice aroma, add rice flour and salt.Mix well. switch off the flame.

  • Add water(rolling water) little by little over the flour, and mix  well with spachula.
  • Flour leaves, the sides of kadai and comes in the form of  soft dough consistency. 
  • Allow it to cool for few minutes.when it is little bit warm knead well using hands.
  • Then take idiyappam Maker, fill 3/4 of it with dough.
  • Then squeeze  it, over greased idli plates in a  circular motion.
  • Steam cook it for 10 - 12 minutes. Now hot Piping Idiyappam is ready to serve.

Notes
  • I used sprouted Ragi flour to make idiyappam. you can use plain Ragi flour also.
  • water quantity varies depending on the type of flour. if you feel batter is dry, heat some more water and add it to make smooth dough.
  • you can serve Ragi Idiyappam with kadalai curry, stew or coconut chutney.
  • Ragi Sevai: you can crumble the idiyappam and keep it ready. Heat the oil, add mustard seeds when it splutters add  chana dal, urad dal, curryleaves, 2 green chillies and 2 red chillies.when dal's turns golden brown, and chillies turns pale, add Crumbled idiyappam and needed salt. mix well. serve hot.Now Ragi Sevai is ready.

Chocolate Peda - Instant Chocolate Peda - Easy Diwali Sweet Recipe

Chocolate Peda is an Easy, yummy & simple  Diwali Sweet Recipe, made with Condensed Milk, Chocolate Powder & Milk Powder. This is an Kids friendly sweet Recipe. if you have a Chocolate Craving, you can make this recipe in no time.When Condensed Milk & Milk Powder blended with cocoa Powder,tastes yumm.

Prep Time : 5 minutes. 
Cook Time : 15 - 17 minutes .

Ingredients

Condensed Milk - 1/2 tin (200 gms).
Milk Powder - 1 cup.
Cocoa Powder - 1 tbsp.
Pistachios- 10.
Melted Ghee - 2 tsp + 2 tsp(for greasing)

Preparation

Chop the pistachios and keep it aside.


Method

    • Take a wide thick bottomed pan/kadai, add condensed milk,cocoa Powder and Milk powder, mix well. It should not have any lumps in it.


    •  Now switch on the stove, after few minutes it starts melting.
    • Stir for few more minutes, till it comes in the form of soft dough and leaves the sides of kadai Now add 2 tsp of Ghee and Mix well. Take a small portion of it, and hold it, you should able to make a ball. This is the right stage to switch off the stove.


    • When it cools down, and still it is little bit warm, knead well.Grease your hand with ghee,then take a small portion of it, make lemon sized ball, then flatten it, and make a dent in a center, as shown in the picture and arrange chopped pistachios over the dent.
    • Repeat the same, for remaining dough also.After making pedas, let it be as such for more than  3 -4 hours. it will be moist and chewy in the beginning, then after an hour or so, the moistness  will go off, then it gets dry texture.
    • Store it in a air tight container.
    Notes
    • After making the dough allow it to cool for few minutes, else it might burnt your hand.
    • Kneading the dough, avoids cracks in pedas.
    •  you get Good shape and Good shiny texture  of pedas, if you grease your hands with ghee.
    • Pedas will be chewy after you make, so let it be as such for 3 -4   hours, then serve.

    Easy Badam Halwa - Almond Halwa - Badam Ka Halwa - Easy Diwali Recipes

    Badam Halwa is a Rich, yummy & Popular Sweet Recipe made with Pureed Almonds & Milk.Badam Halwa is made during Diwali & also served in our Weddings.This recipe can be made with available ingredient in home.I am a big fan of Badam Halwa. we use to Get this  Rich sweet  from Coimbatore  krishna sweets. My cousin sister, Mahalakshmi told, that it is an easy recipe, that they will make in  their home & she explained the preparation. I tried it and came out well. So I am sharing it with you all . 


    Badam Halwa 


    Badam Halwa

     Prep Time : 5 min. 
     Cook Time :  20  minutes.

    Ingredients

    Badam /Almonds - 1/2 cup.
    Sugar - 1 + 1/2 cup.
    Milk - 1/2 cup.
    Ghee - 1/4 Cup.
    Yellow Color -  a Generous Pinch.
    Water - 1/4 cup.


    Preparation

    Soak the Almonds overnight & Peel the Skin. Alternatively you can soak the Almonds in warm water for 2 hours, then you can peel off  the skin.Keep it Ready.

    Method
    • Grind the Badam Halwa into a little coarse Paste with 1/2 Cup of Milk.
    • Melt the Sugar in  a Pan with 1/4 of water. 

    • When Sugar Completely dissolves, add Ground Badam Paste.Mix well.
    • when Badam Paste, completely, blends with Sugar,add yellow Food color.Mix well.
    • Cook in medium low flame.Keep on stirring.
    • When Halwa is almost thick, add Ghee little by little.
    • when halwa starts leaving the sides of Pan,switch off the flame.Halwa becomes thick after Some time.
    Notes
    • Always Grind the Badam, into little coarse Paste. if  the ground paste is smooth, Halwa may be  sticky.
    • Always use yellow food color, for nice color.
    • you can also soak, saffron in warm milk, for 10 minutes, then add it to halwa, after adding food color, for nice flavours.
    • When halwa starts leaving the sides of kadai, switch off the flame.Halwa becomes thick, when it cools down.
