Brinjal Puli Kuzhambu - Kathirikkai Puli Kuzhambu

Puli Kuzhambu is an traditional Recipe in South India.It made from veggies like brinjal,okra,drumstick or pearl onions. These veggies are flavoured with  spice Powders & simmered in fresh tangy tamarind juice.It Goes well with steamed Rice & Ragi Mudde.I learnt this Recipe from my aunt.Now we will see the preparation. 

 


Brinjal Puli kuzhambu

Ingredients

Brinjal - 10.
Garlic cloves - 6.
Pearl onions - 1 handful.
Tamarind - Amla size.
Coconut - 1/4 Cup.
curry leaves - 1 sprig.
Coriander leaves - 1 fistful.
salt - to taste.
oil - to fry.

To Grind
Onion - 1.
Tomato - 2.
Chilli Powder - 1 tsp.
Sambar Powder - 1/2 tsp.
Coriander Powder - 2 tsp.
turmeric Powder - 1/8 tsp.

To temper

oil - to fry.
Mustard seeds - 1/2 tsp.
Cumin seeds - 1/2 tsp.
hing - a Generous Pinch.
Methi seeds - 10.


Preparation
  • Soak the tamarind in little water for 1/2 an hour.Then squeeze the tamarind, throw pulp & retain water.
  • chop onion & tomatoes.
  • Remove the skin of Pearl onions & Garlic cloves.(if big chop into halves).
  • cut the edges of brinjal & put (+ sign) in 3/4 of brinjal. Place it in water to avoid discolouration.
  • Grind coconut with little water to smooth Paste.


Method
  • Heat the oil, add  a chopped onion. when it turns pink, add tomatoes. saute well till it turns Mushy.Add Chilli Powder,Sambar Powder,Coriander Powder  & turmeric Powder. Give a quick Mix. Then switch off the flame. when it cools down,Grind it into a smooth Paste with little water.



  • Heat the oil, add mustard seeds,when it splutters add cumin seeds,methi seeds,curry leaves  & hing.
  • when cumin seeds sizzles, add Garlic, Pearl onions saute till it turns Golden brown.
  • Add brinjal, saute for 2 - 3 minutes,then add needed water & cook till brinjals turns soft.


  • Add tamarind water, when it starts boiling,add Ground onion tomato Paste.(Adjust water accordingly).
  • when it starts boiling, add coconut Paste. 

  •  Cook for few minutes till it turns little thick like kuzhambu consistency.
  • Garnish with fresh coriander leaves.



Notes

  • Adding tamarind & tomatoes both gives nice tangy taste to kuzhambu.
  • Adding Coconut gives nice aroma to gravy.
  • you can replace brinjal with drumstick or okra .
  • you can also add drumstick with brinjal.
  • Adjust spice level according to your taste buds.
