Ennai kathirikkai kuzhambu- Gutti Vankaya Pulusu - Ennai kathirikkai kulambu

Ennai Kathirikkai Kuzhambu is an authentic South Indian Recipe, made with stuffed small tendered brinjals simmered in tamarind juice & Spice Powder. It tastes extremely Good with hot steamed Rice. Eggplants are wonderful sources of phytonutrients, which have long been known as boosters for General mental health.It promotes anti Aging.Now we will see the preparation of Ennai Kathirikkai kuzhambu.

Ennai Kathirikkai Kuzhambu

Tender purple small  Brinjals - 10 - 12.
Pearl onions - 12.
Garlic - 6.
Tamarind - Big Amla Size
salt - to taste.

 To Dry Roast

Chanadal - 2 tbsp.
Toor dal - 2 tbp.
cumin seeds - 1/2 tsp.
Coriander seeds - 3 tbsp. 
Red chillies -  8.
Fenugreek - 1/4 tsp.
Coconut - 1/4 cup.

To Temper

Mustard seeds - 1/2 tsp.
Fenugreek seeds - 1/4 tsp.
Hing - a Generous Pinch.
curry leaves - 1 sprig.
oil - 5 tbsp.


  • Soak the tamarind in  3  cups of water, for half an hour, then squeeze the tamarind & throw the Pulp. Now tamarind juice is Ready.
  • Put plus sign in  each brinjal  and place in a bowl of water to avoid discoloration.
  • Dry Roast everything given  in dry Roast column except coconut in a medium flame, till dals turns Golden brown colour, then add coconut, saute few seconds, then switch off the flame & allow it to cool completely & grind it into a little coarse Powder.Now spice powder for Ennai kathirikkai kuzhambu is Ready.


  • Now brinjals & stuffing Powder  is ready. Stuffing Requires Patience.Gently fill the brinjal's with stuffing powder.Take care brinjals should not break.Reserve the Remaining spice powder for kuzhambu.

  • Add oil to kadai, when oil is hot, add mustard seeds, when it splutters add fenugreek seeds,add curry leaves, & hing,then add Garlic,when it turns Golden, add Pearl onions, saute till it turns pink,then  gently place the stuffed brinjals, cook in medium flame.

  • Cook it covered and saute now and then,till brinjals are soft.it takes (nearly 15- 18 minutes to cook brinjals.)
  • When brinjals are soft add tamarind extract &  remaining  enna kathirikkai masala powder, cook until gravy thickens lightly & oil floats on top.


1. Always choose small tender brinjals.
2. Adding toor dal is optional.
3. you can add urad dal also.
4. you can make the spice powder in advance.
