Allam Pachadi - Ginger Chutney - Inji Chutney

Ginger chutney(Allam Pachadi) is a Good accompaniment for idli,dosa,appam, pesarattu, chapathi  roti's and curd rice. Allam pachadi is a popular Andra Side dish Recipe. Ginger chutney made with ginger,some lentils, tamarind and jaggery makes the chutney so divine.

  About 5000 years,ginger is considered as universal Medicine by ancient ancestors of china and India. Ginger cures many diseases and health problems.Ginger is a good source of Magnesium,Manganese,potasium,copper,vitamin B6.it has high antioxident property. Ginger relieves Nausea and Vomiting. Ginger prevents morning sickness during pregnancy. Ginger improves digestion. Reduces Respiratory problems such as cold,asthma, and flu. Ginger fights against cancer. it lowers cholesterol.Now we learn to make healthy, tangy and yummy Ginger chutney.





Ingredients 

Ginger - 2 " inch.
oil - to fry.
chanadal - 1 tbsp.
urad dal - 1 tbsp.
tamarind - small goosebery size.
Red chillies - 5.
fenugreek seeds - 5.
jaggery - 1 tsp.

To Temper

Mustard seeds - 1/2 tsp.
curry leaves - 1 sprig.
hing - Generous pinch.

Preparation

cut the ginger into small pieces.

Method
  •  Heat 1 tsp of oil, add chandal,urad dal, red chillies, fenugreek seeds saute everything together,  till dals turns golden brown colour, then remove it from kadai and keep it aside.

  •  In same kadai, add  Ginger and tamarind , saute till ginger turns golden brown colour and it shrinks. 

  • Then add everything in a blender and grind it into a smooth paste with little water, 1 tsp of jaggery  and salt.
  •  Heat the oil, add mustard seeds, when it splutters add curryleaves and hing, saute for few seconds and pour it over chutney as tadka.  

Now Ginger Chutney is ready to serve with idli, dosa,appam, chapathi roti's and pesarattu.
