Chilli Paneer - Dry Chilli Paneer - Chinese Chilli Paneer

Chilli Paneer is a Popular Indo - Chinese Starter Recipe. It can also be Served with Fried Rice & Noodles. Paneer is coated in a dry corn flour, then it is shallow fried, & sauted with spicy sauces. Chilli Paneer is one of the best starter for Paneer lovers. This is a hot spicy delicious Starter that melts in Mouth.Preparation is so simple, you can bring Restaurant taste at home itself.


Chilli Paneer Dry

 Prep Time :  10  min.

Ingredients


For Marination
Paneer - 200 gms.
Chilli Powder - 1/2 tsp.
Corn flour - 2 tbsp.
Sugar - 1/2 tsp.
salt.

For Sauces

Onion Big - 1.(Cut into Squares)
Capsicum - 1.(Cut into Squares)
Soya Sauce - 2 tsp.
Chilli Sauce - 2 tsp.
Tomato  Sauce - 2  tsp. 
Pepper Powder or Crushed Pepper - 1/2 tsp.
oil - to fry.
Garlic - 10.(finely chopped)
Ginger - 1 inch.(finely Chopped)
Green chillies - 3. (sliced Diagonally)
salt - As needed (adjust) 

Preparation
  • Thaw the Paneer & cut the Paneer into squares or Rectangle.
  • Quarter the Onions & remove its layers.
  • cut the Capsicum into squares.
  • Finely Chop Ginger & Garlic. Cut the Green Chillies Diagonally. 
  • Mix Soya sauce,Chilli Sauce,tomato  Sauce with 1/2 tsp of Chilli Powder &  keep it ready.
 Method
  • Mix Cornflour,Chilli Powder,Sugar & Salt . Coat the Paneer Cubes in this Mixture Gently, such that Paneer Coats evenly in this dry Powder.Retain the Remaining cornflour Mixture.


  • Heat the tawa or Pan, add 4 tsp of oil,when oil is hot, Gently arrange the Paneer on tawa,fry the Paneer, till it turns Golden on both the sides by flipping the Paneer cubes.Cook in Medium flame. 

  •  When Paneer turns Golden remove from tawa or Pan. Then keep the fried paneer in  a plate.
  • Heat the pan or kadai, add oil, when it is hot add Finely chopped Ginger & Garlic.Saute till, it  turns Golden & aromatic.

  • Add squared Onion,Capsicum & Green chilly.Saute till it turns light Golden at the Edges.
  • Add the Sauces,cook till the raw smell of Sauces disappears.

  • Mix the remaining corn flour with 4 tbsp of water & add to the sauces.
  •  Cook till sauces thickens. Now add fried Paneer, Mix Gently till everything Combines. Serve the Chilli Paneer hot.

Notes
  • you can Garnish with Celery or Spring Onions before Serving.
  • Always fry the Paneer in medium low flame, don't cook for longer time else it turns rubbery.
  • I fried the Paneer in tawa, instead you can deep fry also.
  • For more spiciness you can replace tomato  sauce with tomato Chilli  Sauce. 
  • Adding Cornflour at last gives glaze texture to Paneer.

Hotel style Chutney - Raw Onion Coconut Chutney

Raw Onion  Chutney is a Simple, delicious chutney with nice aroma of Coconut & Onions. It is made with freshly Grated coconut , shallots(pearl onions) & Red Chillies. This Chutney tastes Great with Idli,Dosa,chapathi,Roti, Akki Roti,Paniyaram,Appam,Bonda & vadai.  You can make this chutney in no  time.This Chutney tastes Good without the tempering .





Hotel Style Chutney

 Ingredients

Coconut - 1 cup.
Red chillies - 4.
Pearl onions/Shallots - 1/2 cup.
Salt - to taste.


Preparation

Remove the skin of Pearl onions & keep it ready.

Method

  • Dry Grind Coconut,chillies & salt into a  coarse Paste.
  • Then  add Pearl Onions & grind into a little coarse or smooth paste as you wish. Then add little water & bring to thick  chutney consistency.  


  • Now hotel style chutney is Ready.

Notes

  • Tempering is not necessary for this chutney.
  • you can add 2 garlic,while Grinding Pearl Onions, for additional flavour.
  • Always add fresh coconut for best Results.
  • Adding Pearl onions gives nice taste to chutney.

Tawa Paneer Masala - Easy Paneer Tawa Masala

Tawa Paneer Masala is an Easy & Quick Paneer Side dish Recipe, made with Onion,tomato,Capsicum,Paneer & some Spice Powders.The Entire Gravy is made using Tawa. It accompanies Chapathi,Roti,Naan,Rice,Phulka,Jeera Rice & Poori. It is an Semi Dry Gravy. When the gravy cooked on tawa, it gets it unique taste & flavour.My Husband became the fan of this Gravy.





Tawa Paneer

 Prep Time :  10   min. 
Cook Time : 15   minutes.

Ingredients
Paneer - 200 gms.
Capsicum - 1/2.
Onions -2.
Tomato -3.
Salt - As needed.
Ginger Garlic Paste - 2 tsp.
Green Chillies -2.
Kasthoori Methi - 1 tsp.

Spice Powders

Chilli Powder - 1 tsp.
Coriander Powder - 1 tsp.
Turmeric Powder - 1/4 tsp.
Garam Masala/Kitchen King Masala - 1/2 tsp.


To Temper
Butter - 3 tbsp.
Cumin seeds - 1/4 tsp.
Ajwain - 1/4 tsp. (optional)

Preparation

Chop Onions,tomatoes,Capsicum finely.
Chop the Paneer into 1/2 inch cubes.
Slit the Green chillies.
Grind the tomatoes in a blender or Mixie into a fine Puree.


  Method
  • Heat the tawa, then  melt the butter.
  • Add Cumin seeds & Ajwain seeds. Saute till you get nice aroma from it.
  • Add Ginger Garlic Paste & Green Chillies. Saute till Raw smell in Ginger Garlic  Goes off.
  •  Add Onions,Saute till it turns Pink.
  • Add Capsicum Saute for 3 minutes. Then add all spice Powders such as Coriander Powder,Turmeric Powder,Chilli Powder.Mix well, such that masala Powders blends well with Onions & Capsicum.
  •  Add Tomato Puree & 1/2 cup of water. Add Garam Masala.
  • Saute till  raw smell of Pureed  tomatoes Goes off  &  Masala thickens slightly  &  also you get nice smell from Gravy.
 
  • Now add Paneer cubes Mix well, such that masala gets coated evenly on Paneer.

  • Garnish with crushed Kasthoori Methi. Serve hot with Chapathi,Roti,Phulka,Kulcha,Naan,Rice or Jeera Rice.
Notes
  • Instead of using Ginger Garlic Paste, you can crush fresh Ginger & Garlic in Mortar & Pestle for Nice flavour.
  • Instead of Pureed Tomatoes, you can use finely Chopped tomatoes.
  • Adjust the water according to your consistency preference.
  • if you don't have tawa, you can use frying Pan.
  • if using tawa use Medium or large size tawa for Easy Cooking.

Kadle uddina bele chutney Recipe - Chana dal Chutney - Kadalai Paruppu Chutney

Chanadal Chutney is a Popular South Indian Chutney Recipe.This Chutney is a Great Accompaniment for idli,dosa,Chapathi,Rava Idli, Mysore Masala Dosa,Neer dosa & Biyyam Rava Upma.   Chana dal is called Kadle Bele in Kannada & Kadalai Paruppu in Tamil.This Chutney is a No onion & No Garlic Chutney.This Chutney is Easy to make & we will see the preparation of this Chutney.


Kadle Uddina Bele Chutney

 Prep Time :  5   min. 
Cook Time : 7 - 8   minutes.

Ingredients

Chanadal - 2 tbsp.
Urad dal - 1 tbsp.
Red Chillies - 4.
Coconut(grated) - 1/2 Cup.
Salt - To Taste.
oil - 1 tsp.

To Temper

Oil - 1 tsp.
Mustard seeds - 1/2 tsp.
Urad dal - 1 tsp.
Red chillies - 1.
Hing - 1/8 tsp.
Curry leaves - 1 Sprig.

Preparation

Grate the Coconut & keep it ready.


Method

  • Heat 1 tsp of oil in a Pan, add chanadal,urad dal & Red Chillies.Saute till the dal's turn Golden Brown Colour. Cook in Medium Low flame.

  • Then add Coconut, give a quick Mix.Switch off the flame.Coconut gets Cooked in a heat of the kadai. 
  • Grind everything into a smooth paste,  with needed salt  & water to get chutney Consistency.

  • Heat the oil, add mustard seeds when it splutters add urad dal,Red chillies,Hing & curry leaves.When dal turns Golden brown colour, switch off the flame & Immediately Pour the tempering over the chutney. Now the Chutney is Ready to serve.                              

 Notes
  • Adding Urad dal to the tempering gives crunchy taste to the chutney.
  • you can also add Equal Proportion of Urad dal & Chanadal to make this  chutney.
  • you can add handful of coriander leaves while adding coconut & switch off the flame, both coconut & Coriander leaves gets cooked in heat of the Pan, then grind into a smooth paste.

Ragi Dryfruit Milk Shake - Ragi Milk Shake -Finger Millets Milkshake

Ragi is packed with fiber content & anti oxidant. Ragi is a perfect cereal for those seeking to lose weight and must be included in weight loss recipe. The high amount of fiber and low level of unsaturated fat makes it an ideal food for healthy people.Planned to start a New year with Healthy Recipe, so I am Posting this Healthy Drink.




Dry fruits Milk Shake

 Prep Time :  10   min. 
Cook Time : 10  minutes.

Ingredients

Ragi flour -  2 tbsp.
water - 1 Cup.
Cashews -6.
Almonds - 4.
Pista - 4.
Walnut - 1.
Sugar - As needed.
Fresh Cream - 2 tbsp (Optional)
Cold  Milk - 1 Cup 

Method
  • Dry Roast Cashews,Almonds,Pista,Walnuts in a kadai, till it turns Golden brown colour & Grind into a Coarse Powder.Now dry fruits mixture is Ready.Keep it aside.

 
  • Take Ragi flour in a Pan, add in water & mix well, without any lumps.Now cook in a Medium flame, till it thickens. Allow it to cool down.



  • In a blender or mixie, add  Ragi Mass, Milk,Sugar &  Fresh cream.Beat till it turns  Smooth & frothy.
  • Add dry fruits mixture &  give a Give mix. Now Milk Shake is Ready to serve.

       Notes
    • You can Make this Milk Shake using Sprouted Ragi flour also.
    • you can add  a tsp of Cocoa powder along with Ragi flour, to get chocolate flavour.
    • Adding Nuts mixture at last, give nice crunchiness to milk shake.
    • you can add a scoop of Vanilla Ice cream or Chocolate Ice cream in a blender & beat it to get nice creamy texture.
    • Instead of Sugar, you can use Cane Sugar also.
