Samai Vegetable Pakoda - Millets Pakoda - Little Millets Pakoda

Samai Vegetable Pakoda is a Crispy,Crunchy fritters Recipe made with Millets flour, besan flour  & Vegetables. It is an apt tea  time snack. Little millet known as saamai in Tamil,Kutki in Hindi,saame in Kannada,Sama in Telugu & chama in Malayalam is a wonderful millet which is suitable for people of all age groups.you can make this pakoda with barnyard Millet flour or kodo Millet flour also.




Samai Vegetable Pakoda

 Prep Time : 15 min. 
Cook Time : 25   minutes.

Serves  :   4 - 5. 



Ingredients

Samai flour - 1/2 cup.
Besan flour - 1/2 cup.
Chilli Powder - 1 + 1/2 tsp.
Salt - As needed.
Carrot (Small) - 1.
Beans - 6.
Cabbage - 1/2 cup.(chopped)
Capsicum(small) - 1/2.
Onion - 2.
Curry leaves - 1 Sprig.
Coriander leaves - 2 tbsp(Finely Chopped)
Green chilly - 1.

Preparation

Finely Chop Carrot,Beans,Cabbage,Capsicum,Onion,Curry leaves,Green Chilly & Coriander leaves.

Method
  • Take a Mixing Bowl add Samai flour, besan flour, Chilli Powder, finely Chopped Carrot,beans,cabbage,Capsicum,Onion, Curry leaves & Coriander leaves.Sprinkle needed salt & Mix well to make a dry Mixture.

  • Then sprinkle water little by little to make a tight dough, as Shown in the Picture. Mixture must be tight, if Soggy it absorbs more oil & you won't get crispy Pakoda's.

  • Heat the oil,if you feel the oil is hot, drop small Portion of dough into hot oil. if it raises immediately, it is an indication that oil is hot, else heat the oil for few minutes till it is hot.
  • When oil is hot, keep  the flame to medium, then crumble the dough into oil, as you wish in a form of fritters.
  • Deep fry it, until it turns Golden brown colour on both the sides.

  • When it cools down, store it in a air tight container.
Notes
  • you can make this Pakoda using Kodo Millet Flour & Barnyard Millet flour also.
  • you can add handful of Chopped Cauliflower.
  • you can finely chop methi leaves & add to flour. 
  • you can add 1/4 tsp of fennel seeds to  the flour.
  • Always make the dough tight by sprinkling water to get cripsy Pakoda's.

Sorakkai Adai - Sorakaya Adai - Bottle Gourd Adai

Sorakkai adai is a healthy & tasty adai made with lentils & some spices, with grated Sorakkai as Topping. lentils are packed with rich protein & fibre content. Bottle Gourd  contains many vitamins and minerals, such as, calcium, magnesium, phosphorus, Vitamin A, C and folate. so it is a healthy adai recipe. Spicy adai with mild taste of sorakkai as topping make the adai yummy. I learnt this recipe from my neighbour Hastalatha.




Sorakkai Adai

 Prep Time :  15   min. 
Cook Time : 4 -5  minutes per adai.

Ingredients

Idli rice - 1 cup.
Chanadal - 1 cup.
Toor dal - 1 cup.
Ginger - 1 inch.
Cumin seeds - 1/2 tsp.
Fennel seeds - 1/2 tsp.
salt - as needed.
Red chillies - 12.
curry leaves - 1 sprig.
Hing - 1/4 tsp.

To temper

Mustard seeds -  1 tsp.

Toppings

Sorakkai -1.

Preparation

Soak idli rice, Toor dal & chanadal for 2 hours.  

Method
  • Grind Idli rice, Toor dal , chanadal with cumin seeds,fennel seeds,ginger,curry leaves,red chillies, salt & hing into a little  coarse paste. Let the consistency be little thinner than idli dosa batter consistency.
  • Heat the oil, add mustard seeds when it splutters pour it in the batter. Mix well. Now batter is Ready.  

  • Heat the tawa, when it is hot, just spread the batter , in a circular motion,little thick. Sprinkle Grated Bottle Gourd on each Adai. Drizzle some oil, cover with lid.
  • When it is cooked, flip the adai, remove from tawa, when both sides are cooked.

Notes
  • Fermentation is not necessary for this adai. but you can give the standing time of 2 hours.
  • you can add chopped Onions or Green onions to the batter for extra taste.
  • Cover the adai, to avoid dryness to the adai.
  • Alternatives: Instead of adding Grated bottle Gourd on top of adai, you can add chopped bottle Gourd while Grinding or you can Grate bottle Gourd and it to batter & mix.

Pittu Recipe - Dal Upma(Moongdal & chana dal)

Pittu is an Authentic Vysyas delicacy, made with chanadal & Moong dal. It is a special recipe made when guest arrives home. This upma is made only with dals, so it is  packed with high content of fiber & proteins. so it is fiber & protein Rich upma.

Ingredients

Moongdal - 3/4 cup.
chana dal - 1/4 cup.
lemon(big) - 1.
Green chillies - 6.
salt - as needed.

To Temper

Mustard seeds - 1/2 tsp.
Urad dal - 1 tsp.
chana dal - 1 tsp.
curry leaves - 1 sprig.

Preparation

Soak the Moong dal & chanadal to gether for 2 hours.



Method
  • Grind the soaked dal with salt to a coarse paste, with little water.The consistency be like idli batter consistency. Then  transfer it to Greased plate or tray  & steam cook it for 15 minutes.

  • Meanwhile Grind Green chillies & salt to a paste. 

  • When it completely cools down, crumble it. Add Green chillies paste & squeezed lemon to it & give a mix.

  • Now heat the kadai, add mustard seeds when it splutters add chanadal, urad dal, curry leaves, when dals turns golden brown, add  1/4 cup of water, when water starts boiling add this crumbled idli's , add salt(adjust salt) & give a mix.  

 Notes
  • Always Grind the batter coarsely.
  •  if you find difficulty in crumbling the idli's, pulse it in a mixie.
  • you can grind both the dal's in equal ratio also.
  • you can have pickles or onions as sides.

Potlakaya Koora - Snake gourd curry - Pudalangai poriyal

Potlakaya Koora is a Healthy & yummy Curry. Snake Gourd is Cooked till soft, then Ground Ginger,Green chillies & coconut Paste is added over it & cooked chanadal is also added for additional taste  to the curry. Snake Gourd has large Amount of water content & loaded with abundant  fibers, proteins, vitamins A, B and C in addition to it, it includes minerals like manganese, potassium, iron and iodine.This curry is No onion No Garlic Curry. I am a big fan of this curry. Now we will learn to make this simple stir fry.

Ingredients

Snake Gourd/Potlakaya - 2 cups or (2 medium sized).
Chanadal - 1 tbsp.
salt - to taste.
Green chillies - 1.
Ginger - 1/4 inch.

To Temper

Mustard seeds - 1/2 tsp.
Cumin seeds - 1/2 tsp.
curry leaves - 1 sprig.
Red chillies - 2.


Preparation 

  • Cook the chanadal till soft, with needed water.you can pressure cook the dal or cook it directly in a kadai.
  • Grind  Red chillies + Ginger + salt(adjust) into a paste(without adding water).


Method
  • Heat the oil, add mustard seeds, when it splutters add cumin seeds, when it sizzles add curry leaves,then add  Broken Red chillies,
  • When chillies turns light Golden brown colour,add Chopped Snake Gourd & little salt. Saute Potlakaya(snake Gourd)  in high flame for 2 - 3 minutes.

  • Then sim the stove & cook it covered till soft.(stir now & then).
  • When snake Gourd is soft, add  Ground Coconut & cooked chana dal.

  • Stir till everything combines well.


Notes
  • Adding Ginger gives nice taste to Potlakaya.
