Musk Melon Seeds Burfi - Melon Seeds Burfi

I am very happy to share with you that my blog has Completed 4 years in blogging Journey. My Hearfelt Thanks to all my Readers,Co Bloggers,family and friends, for their support, motivation and Encouragement. 

     Today I am Sharing Musk Melon  Seeds Burfi, which is a Very Popular sweet Recipe in vysyas Home. I am a big fan of this Recipe.I hope from kids to Elders everyone like this sweet.After making this sweet i have given to the neighbour, to taste & asked them to identify the name. They told as Badam burfi,Kaju Burfi,Coconut Burfi like that. They can't recognize. yes !!! this burfi has very unique & distinct Taste with combination of all taste. I told it was Musk Melon seeds burfi. They were so surprised to hear it. I explained the method, they told that they will surely try. I wanted to share this special recipe for you all,on this special occasion.

Musk Melon  Seeds Burfi

 Prep Time : 15  min. 
Cook Time : 15   minutes.

Ingredients
Musk Melon Seeds - 1 cup.
Sugar - 1 cup.
Water - 1/2 cup.
Ghee - 1/4 cup.

Preparation

  • Powder the Melon seeds in a mixie or blender, and keep  aside.
  • Grease the plate with Ghee and keep it ready.




Method

  • Take the thick bottomed vessel, add sugar,then add 1/2 cup of water.keep the flame to medium.(make sure that sugar completely immerse in water).
  • water starts thickening slowly, as you cook. Boil till sugar Reaches 1 string consistency.


  • How to check 1 string Consistency? Take few drops of syrup between your Index finger and Thumb finger, and pull it apart, a string will form as shown in the picture. 
  • Sprinkle Melon  seeds powder. stirring continously. Make sure that it should not have any lumps.
  • When it is almost thick, add Ghee little by little.Keep stirring.
  • Initially you can find frothy here & there, as you proceed, the whole mixture turns frothy.
  • you  get nice  Pourous texture, as shown in the picture.Now transfer the mixture to Greased plate.

  • Pat it well with ladle, or big Spoon.
  • When it is little warm draw lines, as per your desire shapes.Then store it in a air tight container,when it is completely cool.



  • Its shelf life will be 1 week. 
Notes
  • when you check for one string consistency, take sugar syrup from back of ladle, it will be little bit warm.
  • if one string is not formed, keep on cooking , till  it reaches the consistency.
  • Always sprinkle the powder to cook evenly.
  • when the whole  mixture turns frothy, immediately pour over the Greased plate, else burfi turns hard.

Green Peas Paratha - Matar Paratha - Green Peas Recipes

Peas Paratha is a healthy & filling Breakfast Recipe, made with  Green peas  as Stuffing. It is served with pickles or curd.Health benefits of Green peas includes they are rich sources of many minerals such as iron, calcium, zinc, copper, manganese etc. which enhances the immune system of your body.Fresh pea pods are considered as an excellent source of folic acid.So, peas are good for expectant mothers and the health of new born babies.Today we will learn to make healthy Paratha Recipe. 



Peas Paratha

 Prep Time : 15  min. 
Cook Time : 20 minutes.

Ingredients

For the dough

Wheat  flour - 1 cup.
oil - 1 tbsp.
salt - as Needed.

For Stuffing

Green Peas  - 1/2 cup.
Green chilli -1.
salt - as Needed.
Cumin Powder - 1/4 tsp.
Ginger - 1/2 inch.
coriander leaves - 2 tbsp.
lemon juice - 1/2 tsp.


Method

Dough Preparation

Take a wide vessel, add wheat flour, salt & oil. Mix well. Then add water little by little to make a soft and pliable dough. cover the dough & keep it aside. Now dough is ready.




Stuffing Preparation

Steam cook the Green peas in a pressure cooker for 5 to 6 whistles.(Add water in a cooker & place the bowl with Green peas & cook for 4 to 5 whistles).



Grind Green chilly,Ginger & salt,then add cooked Green Peas & coriander leaves & Grind it, little coarsely. Then add cumin powder & give a quick Mix. Now stuffing is Ready.




Paratha Preparation

Divide the dough into equal portions & make a  balls. Take each ball, pat it lightly & make bowl shape  as shown in the picture.(as we make for kozhukkatai).

Then spoon it with stuffing,then  bring the edges together & seal it properly as shown in the Picture.
Then dust it with flour & roll Gently into thick Parathas.



Cook on both the sides, till Golden spots appear by Drizzling oil or Ghee. Now Paratha is ready to serve.




Notes


  • Always make soft & pliable for dough for softer parathas.
  • When you make parathas, make a bowl, and place the stuffing inside, for easy rolling. Alternatively, if u can't make  bowl,  you can make small poori's & place stuffing in the centre then seal it properly.
  • Adding cumin powder gives nice flavour to Paratha.
  • I used fresh Green peas, you can use frozen Green Peas also.

Spaghetti Aglio E Olio - Easy Aglio Olio Recipe - Easy Pasta Recipes

Spaghetti Aglio E Olio is an Popular Italian Recipe made by sautéing Minced Garlic,spiced with Chilli flakes, & Garnished with Parsley or coriander leaves. Spaghetti  Aglio Olio Means Spaghetti with "Garlic & Oil ". This is an Easy Pasta recipe, made  in jiffy. Garlic lovers like this pasta  a lot.Cooked pasta when tossed with Roasted Garlic & chilli flakes, tastes delicious.As this  pasta is so mild,  kids love  to eat long strings with mild aromatic flavour.



Spaghetti Aglio E Olio
Cook Time : 25 minutes  .

Ingredients

Spaghetti - 200 gms.(1/2 packet)
Garlic - 10  small cloves.
Red chilli flakes - 1 tsp.
Olive oil - 2 to 3 tsp.
coriander leaves - 2 tbsp.
Salt & water - As needed.


Preparation

  • Chop the Garlic & coriander leaves finely,keep it aside. 
  • Cook the pasta, as per instructions.(Take a Wide vessel, and allow water to boil, when it comes to rolling boil, add spaghetti & cook, till soft).Then drain it in a colander and keep it aside.




Method
  • Heat the oil  in a pan, add chopped Garlic, when it turns light Golden brown colour, add Red chilli flakes, and saute for 20  seconds.Now keep the flame to low.

  • Then add cooked pasta , chopped corainder leaves, and salt.

  • Stir  for 2 - 3 minutes, to combine, and switch off. Aglio Olio is Ready!!!




Notes

  • Don't break the spaghetti, use it, as it is.
  • Cook the pasta till al dente (Cook pasta, with firm to bite).
  • Don't over cook the pasta. 
  • Instead of coriander leaves, you can add Parsley also.
  • Adjust Garlic, according to your taste buds.
  • you can top with little Cheese, if you wish.

Easy Mooli Paratha - Spicy Punjabi Mooli Paratha - Radish Paratha

Mooli Paratha is a soft & healthy Paratha Recipe, made with whole wheat flour,Radish & some Spices. Mooli Paratha is a Popular Punjabi Recipe. Health benefits of radish incude,it is packed with the antioxidants and isthiocyanates which can kill cancer kills.It high water content helps in maintaining the body moisture level and preventing from the dehydration.Radishes are the natural food having cooling effect on the body which decreases down the excess body heat during summer season.it prevents the kidneys and urinary system from infection and other disorders by removing excess toxins from the body.Now we will learn to make healthy Radish(Mullangi) Paratha.


Mooli Paratha

 Prep Time : 10  min. 
Cook Time : 3 -4   minutes per paratha
Recipe Category:Punjabi   Recipe
Yield  :   5 . 

Ingredients
Radish - 3/4 cup ( Medium size Radish 2).
Wheat flour - 1 cup.
chilli powder - 1 tsp.
cumin powder - 1/2 tsp.
Garam Masala - 1/2 tsp.
Salt - As needed.
Coriander leaves - 2 tbsp.(finely chopped)
Water - As needed (to sprinkle)
oil  - to fry + 1 tsp for making dough

Preparation

Peel & grate the Radish, mix with little salt & keep it aside for 15 minutes.Then squeeze the Grated Radish, & reserve the squeezed water for mixing the dough.


Method
  • Take a Mixing bowl add Grated & squeezed Radish, Wheat flour,Chilli Powder,Cumin Powder,Garam Masala,salt, oil  & corinader powder. Mix well. 

  • Then sprinkle reserved Radish water to make the dough. Be careful while adding water.
  • Divide the dough into equal sized balls.
  • Roll into parathas.Sprinkle some flour while rolling paratha.
  • Heat the tawa, when tawa is hot, place the paratha & cook on both sides till Golden spots appear. Use Ghee or oil, while frying parathas.

Notes
  • Always use squeezed Radish, while making the dough.
  • you can add 1/4 tsp of turmeric powder, while making the dough for nice colour.
  • Adding coriander leaves enhances the flavour of Paratha.
  • As soon as you make the dough,make parathas else radish oozes the water, & the dough will be sticky while rolling.
  • Serve with Curd, butter  or Pickle.

     As ugadi falls on April  13 2021, i have compiled and posted ugadi recipes from my blog.Ugadi is celebrated as  Telugu &  kannada Newyear. The name Yugadi or Ugadi is derived from the Sanskrit words yuga (age) and ādi (beginning): "the beginning of a new age".Ugadi is celebrated with festive fervour in the states of Maharashtra, Karnataka and Andhra Pradesh. While it is called Ugadi in Andhra and Karnataka, in Maharashtra it is known as "Gudipadwa". 
       In Andhra Pradesh,special  recipes such as "Pulihora", "Bobbatlu" and preparations made with raw mango go well with the occasion. In Karnataka too, similar preparations are made but called "Puliogure" and "Holige". The Maharashtrians make "Puran Poli" or sweet 'Rotis'.Ugadi is a Season for Mangoes and special Mango recipes like Mamidikaya pappu, Mamidikaya Pulihora are made on this day. 

 Ugadi Pachadi, a unique dish of six different tastes, from sweet to bitter, is prepared on the day, which is also the first dish to be eaten by the devotees. Made up of neem buds, jaggery, green chili, salt, tamarind juice and unripe mango, it  signifies life is a mixture of good and bad, joy and sorrow and all of them have to be treated alike.
