Capsicum Chutney (Bell Pepper Chutney) - kudamilagai chutney

Capsicum Chutney is a healthy and tasty chutney recipes made with Capsicum as Main Ingredient.This chutney goes well with Chapathi,Dosa,idli & rice. It can also be used as sandwich spread.Health benefits of capsicum include,Capsicum has the capacity to prevent clotting of blood. Vitamin C in capsicum,plays a major role in dissolving blood clots.Capsaicin is found in the white membranes of  Peppers,which kills the ulcer causing bacteria in the stomach and boosts immunity.Now we will learn to make capsicum chutney.


Capsicum Chutney

 Prep Time : 10  min. 
Cook Time : 15   minutes.

Serves  :  4 - 5 . 


Ingredients

Capsicum medium size - 1(1 cup cubed)
Onions - 2.
Tomatoes -2.
Ginger - 1/2 inch.
Garlic - 2.
Peanuts - 1 tbsp.
coriander leaves - 1 tbsp(chopped).
Red chillies -3.
cumin seeds - 1/2 tsp.
oil - to fry.
salt - to taste.

To Temper

Mustard seeds - 1/2 tsp.
Curry leaves - 1 sprig.
hing - a Generous Pinch.


Preparation

Roast the peanuts,till it turns crisp, then remove from kadai, and rub the skin & keep it aside.
chop onions,tomatoes & Ginger.

Method

  • Heat the oil, add cumin seeds, when it sizzles, add Chopped Ginger,Garlic &Red Chillies.Saute till Garlic turns light Golden brown colour.

  • Add onions,saute till it turns golden brown, then add capsicum saute till it is soft.it may take nearly 5 minutes to cook.
  • Add Tomatoes, & needed salt, saute till tomatoes turns mushy.

  • Then add peanuts and chopped coriander leaves,give a quick mix and switch off the flame.
  • when it cools down, grind it into a smooth paste,by drizzling water.
  • Then heat the oil, add mustard seeds,when it splutters add curry leaves, saute for few seconds,  and add hing & switch off the flame.Pour the tadka over chutney.
  • Now capsicum chutney is ready to serve.



Notes
  • Instead of Green capsicum you can use Red capsicum also.
  • This chutney goes well with idli,dosa, chapathi & rice.
  • Adjust Red chillies according to your spiciness.
  • Adding Peanuts gives nice taste to chutney.

JOWAR KI ROTI - SOFT JOLADA ROTI - JOWAR BHAKRI

Jolada Roti is a Popular flat bread  Recipe in Northern Karntaka Region. Jowar Roti is a Healthy Breakfast Recipe, made with Sorghum flour. Sorghum is gluten free and  also it  offers, strength to bones and keep teeth healthy by giving them energy.Some of the health benefits of sorghum include its ability to prevent certain types of cancer, help control diabetes, improve digestive health, build strong bones, promotes RBC development, and boost energy and fuel production.



  Jowar Roti

 Prep Time : 10  min. 
Cook Time : 3 -4   minutes per roti

yield  :  4 - 5 . 
Ingredients

Sorghum Flour/Jowar Flour - 1 cup.
water - 1 + 1/4 cup.
oil - 1 tsp.
salt - As needed.

Method

  • Heat the water in a pan. When it starts boiling add, 1 tsp of oil, Jowar flour and needed salt.
  • Mix well, till the water is absorbed. Then switch off the flame.
  • After few minutes, when flour is warm, knead well  into a smooth pliable dough. it takes nearly 3 - 4 minutes to make a dough.Now dough is Ready.



Preparation of Roti
  • Take a plastic  cover or banana leaf, grease with oil, take big  lemon sized dough and spread it into Roti's as thin you can,in between wet your hands in bowl of water.

  • Heat the tawa, when it is hot,place the  roti, over the tawa, drizzle some oil.


  • Cook till, both the sides turns golden brown.Then remove it from tawa.

Jowar  Roti

 Prep Time : 10  min. 
Cook Time : 3 -4   minutes per roti

Ingredients

Jowar Flour/ Sorghum  flour - 1 cup.
salt - As per taste.
water - As needed, to knead.
oil or Ghee - to fry the Roti's or applying on it.


Method


  • Take a wide vessel, add jowar flour & salt.
  • Add water little by little  & knead well to make a smooth dough.


  • Divide the dough into equal sized balls.

  • Take a ziploc paper or plastic sheet or banana leaf, grease with oil,  place each ball over it.
  • Spread into thin circular roti's,spread as thin you can.
  • Heat the tawa or skillet, when it is hot ,Gently transfer it from ziploc paper to tawa.
  • cook on both sides till you get Golden spots. Then smear some Ghee or oil over the roti's.
Notes
  • if you feel dough is sticky add some flour, else if you feel the dough is dry add some water.
  • Always serve the Roti's hot.

Variations
  • you can add cumin seeds, while making dough.

Instant Onion Rava Dosa Recipe - Crispy Onion Rave Dose

Onion Rava Dosa is an Popular South Indian breakfast Recipe.It is an Instant Dosa Recipe made with Rava,semolina,Rice flour & Maida.Spiced with cumin seeds,pepper corns & Green chillies.Topped with Roasted Onions.When ever we go for Restaurant, me & my husband often orders Onion Rava Dosa.  Now we will learn the recipe, to make the dosa.




Instant Onion Rava Dosa Recipe

 Prep Time : 10 minutes.
Cook Time : 3 - 4 minutes per dosa

Ingredients

Unroasted Rava/Sooji - 1 cup.
Rice flour  - 1 cup.
Maida - 2 tbsp.
Cumin seeds - 1 tsp.
Pepper corns - 1/2 tsp.
Ginger - 1/2 inch(grated)
Green chillies - 2.
Curry leaves - 2 sprig.
Coriander leaves - handful .
oil - to fry & Roast

Toppings

Onions -   5.

Preparation
  • Chop the Green chillies and keep it aside.
  • Chop the  curry leaves,coriander leaves finely.
  • Grate the Ginger & keep it aside.


Method
  • Take a Mixing bowl, add Rice flour,Rava, Maida & salt. Add needed water, to make thin batter consistency like butter milk consistency.(I have added 3 + 1/2 cups of water,approximately.) 
  • Mix well without any lumps. I used whisk to mix the batter. you can also use your hands.
  • Then add cumin seeds,pepper corns,Green chillies,curry  leaves, & coriander leaves. Now Mix well using a ladle. Give a standing time of 1/2 an hour. 

  • Meanwhile chop the Onions finely, then add  oil in a pan/kadai, & saute the onions  till it turns light Golden brown colour.Then keep it aside.
Dosa Preparation

  • Heat the tawa, when it is hot, smear little oil over the tawa, & rub with onions for  1 minute. Then take ladle of batter and pour it from the  edges, then fill the center part,as shown in the picture.drizzle some oil.

  • Then immediately sprinkle the onions.

  • Cook in medium flame, till the dosa  turns golden brown colour. It takes some time to cook.
  • When it turns golden brown colour,don't flip the dosa. just fold the dosa & remove it from tawa.
  • serve it with Coconut chutney,tomato chutney or sambar.

Notes
  • Make the batter thin like butter Milk consistency, to get crispy dosa.
  • If you feel batter is so thin, add rice flour accordingly.
  • If you feel batter is thick, adjust water according to consistency.
  • Mix the batter everytime, when you pour the batter on the tawa/skillet,while making Rava dosa.
  • Every time,when you pour dosa,check batter consistency, it may tend to thick, after few dosa's.Then adjust water accordingly.
  • Adding Ginger & coriander leaves gives nice flavour to dosa.
  • if you feel dosa is thick, dilute the batter with needed water to get lacy dosa's.
  • Instead of oil, adding Ghee to make dosa gives nice taste to dosa.

Cabbage Peas Curry - Cabbage Vepudu - Cabbage Stir fry

Cabbage Peas Curry is a healthy curry Recipe made with Cabbage & Green Peas. It goes well with Rice,Roti & chapathi's. The health benefits of cabbage include, it is used to treat constipation, stomach ulcers, headaches, obesity, skin disorders,  jaundice, scurvy,  eye disorders, heart diseases & aging.It has a very high content of Vitamin C,which helps in strengthening one’s immunity system. Now we learn to make healthy quick cabbage stir fry.




Cabbage Peas Curry

 Prep Time : 10 minutes.
Cook Time : 20 minutes

Ingredients
Cabbage  - 4 cups (finely Chopped)
Peas - 1/3 cup.
onions - 2.
Ginger - 1/2 inch (grated).
coconut - 1/4 cup(grated).
Green chillies - 3.
salt - to taste.
oil - to fry.

To Temper

Mustard seeds - 3/4 tsp.
cumin seeds - 1/4 tsp.
hing - a Generous Pinch.
curry leaves - 1 sprig.

Preparation

Chop the cabbage finely.
Grate Ginger & coconut and keep it aside.
chop the Green chillies into roundels.
Cook the Green peas, with needed water, till soft & keep it aside.

Method


  • Heat the oil, add mustard seeds. When it splutters add cumin seeds.
  • When cumin seeds sizzles, add Grated Ginger,Green chillies,hing & curry leaves.



    • saute till Green chillies turns its colour.
    • Add chopped onions, saute till onions turns light Golden brown colour.
    • Add chopped cabbage and needed salt.
    • saute in a high flame for 2 - 3  minutes. veggies will ooze water.
    • Then keep it in sim mode. Cook it covered.
    • stir now and then, till cabbage is soft.
    • Then add cooked peas, mix well. Add Grated coconut give a quick mix. 
    • Now cabbage curry is ready to serve with chapathi's,roti & rice.
    Variation

    Cabbage curry with chanadal
    For 4 cups of cabbage, you can use 3 tbsp of chana dal. cook chana dal till soft & add to cooked cabbage instead of Green peas.

    Veg Fried Rice - Easy Fried Rice - Vegetable Fried Rice

    Veg Fried Rice is an Steamed Rice, stir fried in a Wok, or kadai, and it is mixed with Vegetables, of your choice.Fried Rice is an Easy Lunch Recipe, that can be made in No time. It is one of the Popular Indo chinese Recipe.I made Paneer Mutter Masala as an accompaniment for this Fried Rice.


    Veg Fried Rice 

     Prep Time : 15 min. 
    Cook Time : 30  minutes.

    Serves  :   2 . 

    Ingredients

    Basmathi Rice - 1 cup.
    carrot - 1.
    beans - 6.
    Capsicum - 2 tbsp.
    Garlic - 4.
    Spring Onion White - 2 tbsp.(chopped)
    spring onions Green - 2 tbsp.(Chopped)
    Pepper Powder /Crushed Pepper - As Per taste.
    Salt - As required.
    Soya Sauce - 1 tsp.
    oil - to fry & smear.

    Preparation
    • Soak the basmathi Rice, in a water, for minimum 30 minutes.
    • Chop the Veggies finely. So that veggies cooks faster & Easier.

    Method
    • Pressure cook the rice, for 2 whistles with 2 cups of water. Fluff with fork gently, smear a  tbsp of oil and allow it to cool completely.
    • Heat the oil in a kadai, add finely chopped Garlic, when it turns little golden brown, add Spring onions white part.


    • when spring onions turns translucent, add carrot and beans, saute till it shrinks and soft.Then add capsicum saute for 2 - 3 minutes, till it is soft.
    • Then add soya sauce, saute in a high flame  for 2 minutes, with continuous stirring.Then add cooked rice, salt and Pepper.Mix well.
    • Finally Garnish with Spring onions Green part, give a quick mix and switch off the flame.
    • Serve hot with any Paneer   gravies .
    Notes
    • Adding Spring Onions Green part at the last, gives nice flavour to rice.
    • Chop the veggies finely for faster cooking.
    • You can even add mushrooms along with veggies.
    • Veg Fried Rice, goes very  well with Paneer  Gravies.
