Pulla Jantikalu - Pulippu Murukku - Sour Murukku

Perugu Jantigalu  is a Tangy Murukku made using Sour Curd as a Main Ingredient. I am a big fan of Curd Murukku(Thayir Murukku). In my family everybody likes this. I learnt this recipe from my cousin,srimathi Aunty.Usually we buy this murukku in shops. After i tried and came out well, i was so much exited. i hope u will also enjoy the recipe.







Pulla Jantikalu 

 Prep Time : 10 min. 
 Cook Time :  20  minutes.

Ingredients

Rice flour - 1 Cup.
All Purpose flour/Maida - 1/2 cup.
Sour curd - 3/4 cup + 2 tbsp.
butter - 2 tbsp.
Green chillies - 3.
salt - to taste.
oil - to fry.
Sesame seeds - 1 tsp.



Preparation

Grind the Green chillies and salt  with 2 tbsp of sour curd into a smooth Paste.




Method
  • Take a Mixing bowl, add Rice flour,Maida,butter,Ground Green chillies Paste. Mix well.


  • Add curd little by little to make soft  & stiff  dough.
  • Heat the oil in a Kadai, Now take murukku press with 3 holes, add the dough to it  and keep it aside.

  • To check oil is hot,put small piece  of dough in a hot oil, when it pops up immediately,it is indication that oil is hot.
  • Now squeeze the  Murukkus , in a circular motion over  hot oil.cook in medium flame.
  • Cook both sides until the Shh!!! sound & bubbles  ceases & also it turns light Golden brown.


  • Then Remove it, and  drain it in the  kitchen towel.

Notes
  • Always prefer Sour Curd, for Good Results.
  • Grind Green chillies into smooth Paste, for smooth squeezing.
  • Instead of Green Chillies, you can add Red chilly Powder also. 
  • If you are making in large quantity. divide the mixed flour into 2 or 3 portions, then mix  curd  little by little to each portions, before deep frying, else murukku turns red.
  • After making the dough cover the bowl with lid, else dough becomes dry.
  • Be careful while squeezing murukku over oil.
  • When you squeeze murukku, automatically it breaks into small pieces.

Atta Ladoo - Godhi Unde -Wheat Flour Ladoo - Easy Diwali Sweet Recipe

Atta ka Ladoo is an Easy, healthy & Tasty diwali Sweet Recipe, made quickly with available ingredients at home.Roasted Wheat flour,when blended with Ghee & chopped nuts, tastes divine.Even the beginners & office Goers can try this Ladoo's with confidence.Already i posted Maa Ladoo,Rava Ladoo & Poha Ladoo. This is a variation of it. Now we will see the Preparation of Easy & healthy Ladoo's.






Atta Ladoo

 Prep Time : 5 min. 
 Cook Time :  15  minutes.

Ingredients

Wheat flour - 1 cup.
Melted Ghee - 1/3 cup.
Sugar - 1 cup.
Cashews - 15.
Almonds - 15.


Preparation
  • Chop the Almonds and cashews coarsely and keep it aside.
  • Powder a cup of sugar and keep it aside.



Method
  • Dry Roast the Wheat flour, till it changes the colour, & also you get nice smell, then remove it from pan.
  • In a same pan, add Ghee, when it is melted add coarsely chopped Cashews & Almonds.

  • Saute for few seconds till it turns little Golden color. Then switch off the flame
  • Add Roasted Wheat flour & Powdered Sugar.Mix well with a Ladle.

  • Hold balls,when it is warm.
Notes
  • I have added coarsely chopped Cashews & Almonds, you could add pistachios & raisins also.
  • if you like cardomom flavour, you can add cardomom Powder also.
  • i have added 1/3 cup of ghee, you can add lesser too. if you feel ladoo's are dry,you can melt, some more ghee and add to the flour.
  • you can store it in a container,even for week.

Rava Roti - (karnataka style) - Sooji Roti

Rava Roti is an Instant,Easy, Yummy Breakfast/Dinner Recipe of Karnataka. It is made with Bombay Rava as the main Ingredient.Carrots,onions,chillies,cumin,coconut are added up, to give nice flavour. Adding curd gives softness to the roti.When you cook the Rava Roti, aroma of Rava, will be so good & it pulls you to eat the Roti immediately.I had this Roti in my child hood.The taste will be so good. I will be keep on asking my grand mother to make this Roti.She will make this roti for me. After a long time i am trying this Roti Now.Now we will learn the steps for this roti.




Rava Roti

 Prep Time : 15  min. 
Cook Time : 3 -4   minutes per roti

Ingredients

Sooji/semolina - 1 cup.
Sour curd - 1/2 Cup.
onions - 2.
Ginger - 1 inch.
Green chillies - 3
cumin seeds - 1/2 tsp.
curry leaves - 1 sprig.
Carrot - 1.
coconut (grated) - 3 tbsp.
coriander leaves - handful.
salt - for taste.
oil.

Preparation
  • Chop the onions,Green chillies, Curry leaves  and Coriander leaves  finely.
  • Grate the Carrots & Ginger  and keep it aside.

    Method

    • Take a mixing bowl combine sooji, chopped onions,grated carrot,ginger,cumin seeds,Green chillies, coriander leaves, curry leaves,salt  and Grated coconut.
    •  Mix everything  by adding  half cup of curd, then drizzle water little by little  to get  soft and spreadable dough.leave it as such for 15 - 20 minutes. 




      • Then take a plastic sheet or banana leaf  grease with oil, take big lemon  sized dough and spread  it into a circular disc, in between wet your hands in bowl of water. 
      • Heat the tawa, when it is hot,place the  roti, over the tawa, drizzle some oil.


      • Cook till, both the sides turns golden brown.Then remove it from tawa.

        Karamani Sundal - Black Eyed Peas Sundal - Lobia sundal - Navratri sundal Recipes

        This is a festive Navratri Week, made  karamani sundal. This sundal is made with sundal Podi. you can use this sundal Podi for any other sundal varieties like Rajma,Peanuts,chana, mochai sundal and so on. This sundal Podi gives some unique taste to sundal. I learnt this sundal Podi from MIL. 




        Karamani Sundal

         Prep Time :  10  min. 
        Cook Time : 25   minutes per roti

        serves  :   4 . 

        Ingredients

        Karamani - 1 cup.
        oil - to fry.
        Salt - to taste.




        To Make Powder

        Chana Dal - 1 tbsp.
        urad Dal - 1 tbsp.
        Coriander seeds - 1 tsp.
        Red chillies - 2.

        Dry Roast everything and grind into a dry Powder.Keep it aside.





        To Temper

        Mustard seeds - 1/2 tsp.
        urad dal - 1 tsp.
        hing - 1/8 tsp.
        Curry leaves - 1 Sprig.

        Preparation

        Soak the Karamani/Black eyed Peas for 4 - 5 hours, and Pressure cook it, for 2 whistles or till it becomes soft.Then drain the water and keep it aside.

        Method

        • Heat the oil  add mustard seeds,when it splutters, add urad dal, curry leaves, hing.

        • When dal turns golden brown colour, add cooked karamani, then ground powder.
        • Cook  for few minutes till it is well combined. Now sundal is ready.

        Curry leaves Chutney - karuveppilai chutney - karuvepaku pachadi

        Curry leaves chutney is a healthy chutney recipe goes well with Idli,dosa, bonda,samosa,vadai or Pakoda. Also goes well with hot rice. I found lot of curry leaves inside the fridge, so i planned to make this chutney.curry leaves are a rich source of iron and folic acid.Curry leaves is known to help improve digestion and alter the way your body absorbs fat, thereby helping you lose weight. Since weight gain is one of the leading causes of diabetes, kadi patta treats the problem right at the root.Many research shows that curry leaves have properties that can help in lowering one's blood cholesterol levels.



        Ingredients

        Curry leaves - 1 Cup. (Tightly Packed)
        Garlic - 2.
        Cumin seeds - 1/2 tsp.
        Red chillies - 2.
        Green chillies - 1.
        Salt - As per taste.
        tamarind - small piece.
        Coconut - 1/4 cup.(Grated).
        Roasted Peanuts - 2 tbsp.
        oil - to fry.

        To Temper

        Mustard seeds - 1/2 tsp.


        Preparation

        Wash the curry leaves and keep it aside


        Method


        • Heat the oil,add cumin seeds, when cumin seeds sizzles add Garlic.
        • Saute Garlic till it turns golden brown.then add Green chillies,red chillies, when it turns golden brown, add curry leaves.

        • Saute curry leaves for 3 - 4 minutes in a medium flame, then add tamarind. Saute for 1  minute, then switch off the flame.
        • Add coconut & De- skinned Peanuts, mix will. Grind everything into a smooth paste, with required water and salt. 

        • Heat the oil, add mustard seeds.When it splutters Pour over the chutney.Now curry leaves chutney is ready.


        Notes


        • if you make  chutney as a thick Paste, it stays for long time.
        • It tastes Good, if you mix it with hot Rice.
        • while adding Garlic, you can  add 5 - 6 pearl onions also.
        • Instead of Peanuts, you can add fried gram also.

        Creamy Mushroom Pasta - (Tri colour Rotini Pasta) - Mushroom Pasta in White sauce

        Mushroom Pasta is made with Button Mushrooms in Creamy White Sauce.Mushrooms when blended with white sauce Pasta, tastes awesome.I used Tri colour Rotini Pasta  for this Recipe.Mushrooms are an ideal low-energy diet for diabetics. Mushrooms have no fats, no cholesterol, very low levels of carbohydrates, high protein content, and a wealth of vitamins and minerals. They also contain a lot of water and fiber. Moreover, they contain natural insulin and enzymes which help the breaking down of sugar or starch in food. Mushrooms are a rich source of calcium, which is an essential nutrient in the formation and strength of bones. Now we learn to make Mushroom Pasta.

        Ingredients

        Pasta - 2 cups.
        Button Mushrooms - 15.
        Milk - 2 cups.
        Onions - 2.
        Garlic - 4.
        crushed Pepper/Pepper Powder - As per taste.
        All Purpose flour/Maida - 2 tbsp.
        Salt - As Per taste.
        Butter - 2 tbsp.
        Oregano - 1 tsp.(for Garnishing).
        cheese - 2 tbsp(grated).

        Preparation


        How to cook Pasta

            Take the water in wide vessel and bring needed water, to rolling boil, then add Pasta, cook till pasta is soft and firm. stir now and then, to avoid pasta gets sticking  to a vessel. Then drain it in a colander, and Pour cold water over it, to avoid it getting cooked further.

        How to clean the Mushrooms
          
           Take a bowl, add mushrooms and 2 tbsp of Maida/All purpose flour, mix well. Make sure that flour coats well in Mushrooms.Then add needed water to it , rinse the mushrooms, then change the water, again rinse it, drain the water completely and cut into desired shapes.


        • Clean the Mushrooms and cut into desired shapes.
        • chop the onions and garlic, and keep it aside.

        Method

        • Heat the butter in kadai, when it melts, add Garlic.When Garlic turns golden brown colour, add onions.


        • When onions turns golden brown colour, add Mushrooms. Saute mushrooms.Mushrooms oozes water.
        • When mushrooms are completely cooked, and water oozed by it,is completely absorbed, add Maida.


        • saute it. Make sure that mushrooms coats well in Maida.
        • Add  1 + 1/4 cup of Milk.keep stirring, till it coats well with ladle, as shown in the Picture.


        • Add Cooked Pasta,crushed Pepper & salt. Mix well.
        • Add Remaining Milk, mix for few seconds, till it gets creamy consistency.
        •  Garnish with Oregano .Top it with Grated cheese.
        Notes
        • you can add veggies like carrots or capsicum before adding mushrooms.
        • I used tri colour Rotini Pasta, you can use any pasta type.
        • I used crushed Pepper. you can use Pepper Powder also.
        • I used 2 cups of milk, you can adjust the quantity of Milk, as you desired.
        • Serve hot.

        Akki Roti (karnataka Style) - Instant Rice Roti Recipe (With Variations) - Rice Pancakes

        Akki Roti is a Popular Karnataka Recipe made with Rice flour  as a main Ingredient. Akki means Rice and Roti means Pancakes of Native kannada. (wikipedia). you can add onions,carrots,cucumber soaked chanadal & sesame seeds to the dough  for extra taste.During avarekalu season,you can add   avarekalu (field beans) to the dough to make avarekalu roti.In my home,my Mom often makes this roti at evening times,after she comes from office.It is  an easy and Instant breakfast/Dinner Recipe.







        Akki Roti

         Prep Time : 15  min.

        Ingredients

        onions - 2.
        Green chillies - 3
        cumin seeds - 1/2 tsp.
        curry leaves - 1 sprig.
        Chanadal - 2 tbsp.
        coconut (grated) - 2 tbsp.
        coriander leaves - handful.
        salt - for taste.
        oil.

        Preparation
        • Chop the onions,Green chillies, Curry leaves  and Coriander leaves  finely.
        • Soak the Chanadal for 1 hour before preparation.

        Method

        • Take a mixing bowl combine rice flour, Soaked Chanadal, chopped onions,cumin seeds,Green chillies, coriander leaves, curry leaves,salt   and Grated coconut.
        •  Mix everything  by adding  water little by little  into soft and spreadable dough.


        • Take a plastic sheet or banana leaf  grease with oil, take big lemon  sized dough and spread  it into a circular disc, in between wet your hands in bowl of water. 

        • Heat the tawa, when it is hot,place the  roti, over the tawa, drizzle some oil.
        • Cook till, both the sides turns little  golden brown colour then remove it from tawa.Serve hot.I wanted  the roti's to be little soft.so i have taken when it turns little brown.if you want it more crisp, cook for few more minutes, till it turns crisp, and more golden.

        Notes 
        • you can add  2 tbsp of  crushed roasted peanuts to the dough for extra taste.
        Variations 
        • You can also  add  Ground  Coconut + Green chillies + Ginger + salt  while making the dough,instead of chopping it.
        • you can add cucumber(grated) to the dough.you can also add any of these veggies like Carrots(finely chopped)/bottle gourd(grated)/ beetroot(grated)/Radish(grated)/ spinach/Methi leaves/ dill leaves/mint leaves/drumstick leaves  to the dough for extra Nutrition.
        • Avarekalu  Roti: For 1 cup of rice flour, you can add 1/4 cup of Cooked  Avarekalu(field beans),and add rest of the ingredients as i mentioned above to make the dough.
        • Spinach Roti : you can blanch the spinach, puree it and mix it with rice flour,then add all other ingredients as i mentioned above to the dough, and cook as usual.
        • Serve with Tomato Thokku,Mango Thokku,Andhra Tomato Pickle,Gutti Vankaya Kura,  Avarekalu Sagu, or Coconut Chutney.
