South Indian Coconut Rice Recipe - Easy kobbari annam - Thengai sadam

   Coconut Rice is a Popular South Indian Rice Recipe made with Freshly Grated coconut. It is made during festive occasions like Aadi Perukku, Navaratri and Kaanum Pongal. It is also served as Prasadam in Temple. It is an Easy Rice recipe can be made during busy mornings.          

       Coconut has high Dietary Fiber.Dietary fiber helps you to feel for longer, makes it easier to loose weight.It limits the risk of high cholestral,heart disease,certain type of cancer,and other digestive issues.it has a good source of Manganese, manganese is an antioxidant,that prevent damage to your cells and heal wounds.Now we learn to make Easy  Coconut rice.

Coconut Rice

Ingredients

Rice - 1 cup (or) cooked rice/left over rice - 3 cups.
Freshly Grated coconut - 1  + 1/2 cup.
Roasted Peanuts -  3  tbsp.
Cashews - 10.

To temper

Mustard seeds - 1/2 tsp.
Chana dal - 1 tbsp.
Urad dal - 2 tsp. 
Red chillies(Broken) - 4.
Curry leaves - 1 sprig.
oil - to fry.
salt - to taste.


Preparation
  • Cook the rice in such a way that grains are separate.Add a tsp of  any cooking oil, over the rice, and spread it on a wide vessel or a plate, and allow it to cool completely.
  • Grate the Fresh coconut.
  • Remove the skin of  peanuts, and slit it.
  • Fry the cashews in oil, till it turns golden brown, and keep it aside.
Method
  •  Heat the oil  in a kadai/pan, add mustard seeds, when it splutters add chana dal,urad dal, Red chillies,curry leaves.
    • When dal's turns golden brown, add Peanuts saute till, it turns lightly golden brown colour.

    • Then add freshly grated coconut.Saute for a minute.Add salt, mix well.Now switch off the stove.
    • Now add cooked rice & mix Gently. Make sure that coconut  mixes, well with rice.

    • Finally garnish with fried Cashews.
    • Serve with curries, Pappads,kuzhambu or sambar.



    Notes

    • you can make coconut rice, with left over rice also.
    • you can use basmathi rice or plain rice to make this rice.
    • Make sure that cooked rice,should be separate.
    • Add freshly grated coconut, which adds additional taste to coconut rice.
    • Adding Peanuts,gives  nutty taste to rice.

    Cooked Rice Idli - Idli with left over Rice - Soft Idli's

    Do you have left over rice? Don't worry. you could make soft,spongy and yummy idli's.Already i have posted  left over rice recipes,compiled from my blog. This is my 10th post,regarding it.Cooked rice, when blended with idli rava, and curd, tastes good.




    Cooked Rice Idli
    Cook Time : 16 - 18 minutes  .

    Ingredients

    Idli Rava - 2 cups.
    Cooked Rice - 2 cups.
    curd /butter Milk - 1 cup.
    water - 2 cups.
    salt - as needed.
    Green chillies - 4 -5.
    curry leaves - 2 sprig.
    cilantro - fistful.
    Ginger - 1 inch.


    To temper

    Mustard seeds - 1 tsp.
    urad dal - 2 tsp.
    chana dal - 2 tbsp.




    Preparation

    Grind cooked rice + Green chillies + salt with a cup of curd into a fine Paste, in a blender or mixie.



     Method
    •  Take a wide mixing vessel, add rice rava, add ground cooked paste and mix it with 2 cups of water.
    • Allow it to ferment over night or  8 - 9 hrs.
    • Before Making idli's, temper the batter with items listed in "To Temper" column. Then add chopped curry leaves,chopped Ginger and cilantro. Mix well.

    • Make sure the batter is in idli batter consistency.Adjust water According to the consistency.
    • Then take the idli mould, grease some oil, over each plates.Spoon it with batter.
    • Then steam cook it for 16 - 18 minutes, or inserted spoon or fork comes out clean.
    • Allow it to rest for 2 - 3 minutes.Then un mould it.


     Notes
    •  Adding Ginger, Fresh cilantro and curry leaves gives extra flavour to idli's.
    •  Since we are using cooked rice, it takes time to steam cook. check inserted spoon comes out clean,before u unmould.
    • Adjust water according to batter consistency.
    • Fermenting idli rava with cooked rice, gives softness to idli's.
    • if you have left over batter, you can make it as uttapam, the next day.

    Dal fry - Easy Dal Fry

    Dal fry is a  Popular North Indian Recipe, made with Lentils. It is a good accompaniment for Chapathi's,Roti's, Phulka's and Rice. Here i have used Masoor dal and Moong dal with some  spices  for making this fry more aromatic. As lentils are packed with proteins, which gives energy to us and also helps in Easy digestion.Masoor dal when blended with Moong dal and some spices, it tastes awesome.I learnt this recipe from my Neighbour Apoorva.It came out well. it is very Easy to make. you can have it for Roti's as well as Rice. Now we learn to make the Recipe.




    Dal fry
    Cook Time : 20  minutes  
    Preparation time:5 minutes.

    Ingredients

    Masoor dal - 1/2 cup.
    Moong dal - 1/2 cup.
    Pearl onion - 10.
    Garlic - 4 .
    Turmeric - 1/8 tsp.
    Chilli powder - 1 tsp.
    Cumin Powder - 1/8 tsp.
    Garam Masala Powder - 1/2 tsp.
    salt - as needed.
    cilantro - fistful(chopped)

    To Temper

    Ghee - 2 tsp.
    Cumin seeds - 1/4 tsp.
     Green chilly(slit into 2) - 1.

    Preparation

    • Chop the onions and keep aside.
    • Crush the Garlic and keep aside.

    Method

    • Pressure cook Masoor dal + Toor dal with 2 cups of water, till soft, for 3 whistles.Then Mash the dal with Potato Masher or ladle till it turns mushy.
    • Heat the pan, add Ghee, then add cumin seeds, when it sizzles add crushed Garlic,add Green chilly when Garlic turns golden brown, add onions, saute onions,till it turns pink.
    • Then add  all spice powders(Chilli powder +Cumin Powder+ turmeric Powder + Garam masala), give a quick stir.

    •  Add Cooked dal and a cup of water. Then add salt. Mix well. Adjust water according to the consistency.
    • Cook for 5 - 6  minutes, in a  medium - low flame.Finally Garnish with Fresh Cilantro.
    • It goes well with Chapathi, roti and Rice.

    Sabakki Idli - Sago Idli (Karnataka Style)- Sabudana Idli

    Sago Idli is an Easy Breakfast Idli  Recipe, made with Sago,(Nylon),sour curd and some tempering. I had this idli when i went to my cousin's wedding. Idli's tasted Awesome. After some days i tried this idli at home it came out well. so i wanted to share it with you.

        Sago or sabudana is a food which is full of energy and carbohydrates and it is used as breakfast Recipe.Pearl sago is used as one easily digestible non-irritating baby food, as well as a food in inflammatory cases.Sago along with  rice is used to cool the body. In various  parts of India, it is used as fasting food. Now we learn to make filling breakfast Recipe.


    Ingredients

    Idli Rice Rava - 1 cup.
    Sago(nylon-sago) - 1 cup.
    sour curd - 2 cup.
    water - 1 cup + (1 or 2 tbsp according to consistency)
    salt - to taste.
    Grated Coconut - 1/3 cup.

    For tempering

    Mustard seeds - 1 tsp.
    cashew nuts - 20(broken)
    Green chillies -5.
    curry leaves - 2 sprig.
    cilantro - fistful.
    oil - to temper


    Preparation


    Take a wide vessel add Idli Rice Rava,sago,sour curd ,needed salt and water. Mix well. Allow it to ferment for  8 - 9 hours or overnight.

    Method
    • After Fermentation, curd and water might be absorbed by sago.
    • Check batter consisteny, if it is thick, add few spoons of water,and bring it to idli batter consistency.
    • Heat the pan add mustard seeds when it splutters, add cashews saute till it turns golden brown colour, then switch off the flame.

    •  Add curryleaves and cilantro to the pan, saute for few seconds, it  gets cooked in the heat of pan. Now pour the tadka over the batter, add Grated coconut to it &  mix well.

    • Now take idli mould,grease the oil over it, spoon it with batter.

    • Steam cook for 15 minutes or spoon comes out clean.Then serve hot with coconut chutney,podi or saagu.
    Notes
    • After fermentation add needed water according to batter consisteny.
    • you could also add grated carrots to this idli batter. 
    • it taste Good when idli's are Warm.

    Oats Milkshake - Oats Dates Almonds Milkshake - Oatmeal Milkshake

    Oats Milkshake is an Easy and Instant Milkshake made with Oats,Almonds and Dates.Oats Provides high levels of fiber, low levels of fat, and high levels of protein.Oats Contains unique antioxidants beneficial for heart disease.Dates are free from cholesterol and contain very low fat. Dates are rich in vitamins and minerals.Almonds are a source of many nutrients which help in the development and health of the human brain.studies have shown that almonds in the diet,  is nutritive to the overall health and functioning of the nervous system.so it is a healthy filling  Breakfast recipe. 




                                                                               Oats Milkshake

    Prep Time : 5 minutes. 
    Cook Time : 2 - 3 minutes .

    Ingredients

    Oats - 4 tbsp.
    Milk - 2 cups.
    Dates - 10.
    Almonds - 7.
    Honey - 1 tsp.
                                                 
    Preparation
    Chop Dates and Almonds Roughly.
    Dry Roast the oats in a kadai for few minutes till you get nice aroma from oats.

     
    Method
    Grind Oats,Dates and Almonds with 1/2 cup of milk, till it comes to a smooth paste.Then add remaining milk, and a  tsp of honey  and blend for few seconds.Refigerate for few minutes.Then serve chilled.

                                               
    Notes

    • You can also  top with  Almond flakes.
    • you can add   one banana to blend with oats.
    • you can also add chilled milk to blend with  shake, and serve immediately.

    Cilantro Nuts Pesto Pasta - Pasta in Green Sauce - Quick Cilantro Pesto Pasta Recipe

    Cilantro Pesto Pasta is an Easy Pasta Recipe, made with cilantro and some nuts.I used Rotini Pasta Type. Rotini is a type of helix- or corkscrew-shaped pasta.its tight twists help them retain a wide variety of sauces better. They are often used in pasta salads with pesto, Carbonara or tomato-based sauces.Today i used with Pesto.
        This Recipe is taught by my friend Durga.Cilantro's deep-green leaves possess good amounts of antioxidants, essential oils, vitamins, and dietary fiber.Cilantro leaves helps in relieving gastrointestinal problems.Cilantro acts as a natural internal deodorant as it contains a large amount of chlorophyll that can detox the body,by flushing out toxins from the liver, kidney and digestive tract.Yummy pasta when blended with cilantro pesto tastes awesome.




    Cilantro Pesto Pasta
    Cook Time : 10 - 12 minutes  .

    Ingredients
    Pasta of your choice  - 1 cup.


    How to Cook Pasta

    Take the water in wide vessel and bring water to a  rolling boil, then add Pasta, cook till  Al dente.(pasta should be firm to a bite). stir now and then, to avoid pasta gets sticking  to vessel. Then drain it in a colander, and Pour cold water over it, to avoid it getting cooked further.




    Cilantro Pesto Preparation

    Cilantro - 1/2 cup(tightly Packed).
    Cashews - 10.
    Almonds - 10.
    Green chillies - 2.
    Salt - as Needed.
    Soak Cashews + Almonds for 15 - 20 minutes in a hot water. 


    Then Grind Everything  to a fine Paste.


    Mixing 
    Take a Wide Vessel and Mix Cooked Pasta  with Pesto  together. Serve.
     Notes
    •  I used Pasta of type Rotini. you can use any type of pasta.
    • Adding nuts enhances the flavour of Pesto.
    • It is not necessary to saute green chillies, just add as such. Taste won't give up.
    • This cilantro pesto can be used as a spread inside Sandwich.
