Pasta in White Sauce - Penne pasta in white sauce

White Pasta is a creamy Italian Pasta Recipe. Pasta When blended with White Sauce tastes so yumm. Normally we make Pasta in Tomato Sauce, at home. when i went to barbecue hotel, i tasted white pasta, it tasted so yumm, then i became a big fan of white sauce pasta. it is very easy to make.Then when ever i planned to make pasta,i will make two varieties.once in tomato pasta and other one is white pasta.  i will teach you how to make it. i used the pasta of type Penne to make this pasta.Penne is a versatile pasta for many applications because of its practical design. the hollow center and ridges allow it to hold sauce, while the angular ends act as scoops .For interesting Facts of pasta plz visit my link:Pasta facts.


Pasta in White Sauce
Cook Time : 15 -17  minutes
Preparation time:5  minutes  .

Ingredients

olive oil - 1 tbsp.
Pasta - 2 cups.
butter - 2 tbsp.
carrot - 1.
Capsicum - 1/2.
salt - to taste.
Crushed Pepper or Pepper Powder as needed.
Chilli flakes - 1/2 tsp.
Milk - 2 + 1/2 cup. 
Maida(All Purpose Flour) - 2 tbsp.
Oregano - 1/2 tsp.
Cheese - 4 tbsp.


Preparation

How to cook Pasta

    Take the water in wide vessel and bring it to rolling boil, then add Pasta, cook till pasta is soft and firm. stir now and then, to avoid pasta gets stick to vessel. Then drain it in a colander, and Pour cold water over it, to avoid it getting cooked further.

Method
  • Heat the kadai, add 2 tsp of oil, add  chopped carrot suate it .when it is half done add capsicum, saute till veggie are  cooked.Veggies should be soft but maintain its crunchiness.
  • Then remove it from kadai, add butter, when it melted, add Maida saute for few seconds, then add 1/2 cup milk, sir continuously to avoid lumps.cook in low flame. Make sure it should not have any lump in it. When it comes to creamy consistency, add remaining milk.

  • When the Milk starts boiling add  chilli flakes & salt give a quick mix.Then add cooked pasta,veggies,pepper and oregano. Mix well, till is well blended with white sauce.

  • Finally top with cheese and give a quick mix.switch off and serve hot.
Notes
  • While cooking Pasta,make sure, it should be soft and firm.
  • I used Penne Pasta, you could use Pasta of any type.
  • I used Capsicum and carrot. you could also add corns & Mushrooms along with it.
  • Make sure sauce does not have any lumps in it. whisk continuously to break lumps.
  • if you don't have oregano handy,u can omit it.
  •  if you feel pasta is dry, you could add some more milk at last and give a quick mix.
  • serve hot.
  • Before serving if you feel pasta is dry, heat up the milk, add pasta and give a stir.

Maida Dosai - Instant Maida Dosa - All Purpose Flour Dosa

 Maida Dosa is an Instant and comforting Dosa Recipe made with All purpose Flour & Rice flour.Maida dosa will be tasty and crispy. you can make it in no time. Even the bachelors and office Goers can make this batter quickly.


Ingredients 

All Purpose flour(Maida) - 1 cup.
Rice flour - 1/4 cup.
salt - to taste. 
curry leaves - 1 sprig.
Green chillies - 2.
coriander leaves - 2 tbsp (chopped)
Cumin seeds - 1 tsp.

Preparation

Chop the curry leaves & coriander leavesand keep it aside.



Method
  • Take a mixing  bowl add  everything mentioned in Ingredients column, mix well . Then add needed water to make it a dosa batter consistency. Make sure batter should not have any lumps. Consistency should be little  thin, as shown in the picture. Now batter is ready.



  • Heat the tawa, when it is hot, take the ladle of batter  and spread it outside, then fill inner gaps if any. (Spread the dosa like we make rava dosa). drizzle some oil.


  • When it is cooked on one side,dosa turns crisp at the edges, now  flip the dosa, when both sides are cooked remove from tawa and serve hot with any type of  chutney varieties.
Notes
  • Consistency of batter be little thin.
  • Make sure batter does not have any lumps in it.
  • if you wish you could add chopped onions to dosa batter.
  • I used Unbleached All Purpose flour to make this dosa.

Easy Mushroom Gravy - Mushroom Gravy

Mushroom Gravy is a simple and Easy recipe made with mushrooms & spice powders. Goes well with chapathi's,roti's and also stuffing inside dosa's.This Gravy is Mushrooms in tomato sauce.One dietary analysis found that mushroom consumption was associated with better diet quality and improved nutrition. The health benefits of mushrooms include relief from high cholesterol levels, breast cancer, prostate cancer, and diabetes. It also helps in weight loss, and increases the strength of your immune system.

Ingredients

Button mushroom - 200 gms.
onions - 2.
tomato -3.
chilli powder - 1 tsp.
turmeric powder - 1/8 tsp.
Garam masala - 1/2 tsp.
salt - as needed.
fennel seeds - 1/4 tsp.
Ginger garlic paste - 1 tsp.
oil - to fry.

Preparation

clean the mushrooms  and cut it into big pieces.(soak the mushrooms in water, for 3 - 4 minutes, then rub the dirt, thin skin in it  will come out, then remove the stem part of mushroom).Then keep it aside.

 Method

  • Heat the oil, add fennel seeds, when it splutters, add onions, add ginger garlic paste saute till onions turns translucent.
 
  • Then add tomatoes, add chilli powder and turmeric powder. saute till tomatoes turns mushy.
  • Then add mushrooms saute for 4 - 5 minutes.
 
  • Then add 1 cup of water.When water starts boiling add Garam masala and salt.
  • Cook till mushrooms are soft and it comes in the form of Gravy consistency.
 
  • Garnish with cilantro.
  • Serve with chapathi,roti and mild pulao's.

Ragi Idli Recipe - Soft Ragi Idli - Finger Millet Idli

Ragi Idli is a healthy and filling breakfast Recipe packed with proteins and amino acids.Ragi has been proved to work wonders in bringing down blood cholesterol levels. This supports the process of weight loss.Consumption of Ragi based diet is helpful for people with diabetes because of the higher fiber content as compared to rice and wheat.Now we learn to make healthy Ragi idli using Ragi Cereals.



Soft Ragi Idli
Cook Time : 10 - 12 minutes  .

Ingredients
 
Ragi - 1 cup. 
Idli Rice - 1 cup. 
Urad dal - 1/2 cup.
Fenugreek Seeds - 1/2 tsp


Preparation
  • Wash and Soak Ragi  seperately.Soak idli rice Seperately, both  for 4 hrs or over night. Soak urad dal +  fenugreek seeds together, before 1 hr of grinding
Method
  • Grind Urad dal till soft and fluffy. Grind Ragi cereals  in a mixie or grinder with needed water, into a coarse paste, then add rice  grind  it,  into a   little coarse   paste with needed water.
  • Mix together  ground urad dal and ground Ragi batter with needed salt.Normally i use hands to mix well.
  • Allow it to ferment for 7 to 8 hours or over night, depending upon the climatic conditions, if climate is chill more time is required to ferment.In such cases keep the container inside the oven it will get fermented quickly.
  • Consistency should be like normal idli batter consistency.


  • Pour the batter over the idli mould, and steam cook for 10 - 12 minutes. Insert a spoon to check, whether idli's are done. if it comes out as clean spoon,idli's are cooked else cook for few more minutes.

Notes
  • Urad dal Consistency should be fluffy,it should not be watery.So add water little by little to grind the urad dal.This is very important step to prepare soft and fluffy  idli's.Even if rice consistency is watery, if u mix with urad dal batter, after fermentation, it becomes thick. 
  • While mixing the  batter together, stir from the bottom of container . usually i use hands to mix the batter.   
  • You can also add 1/4 cup of water, to batter and make   Ragi dosa's.

Mango Tomato Thokku Recipe - Instant Mango Tomato Thokku

Mango Tomato Thokku is made with Mango, Tomato jaggery and chilli powder. Tangy taste of Mango when blended with tomatoes and jaggery tastes awesome. This thokku goes very well with Chapathi,roti, idli, dosa and also a spread as  bread.It also goes very well with curd rice.This recipe was taught by may aunt.In my home everyone loved it. This thokku can be made in jiffy.Bachelors and office goers can try this recipe at busy mornings for multiple purpose.


                               Mango Tomato Thokku
Cook Time : 12 - 15 minutes.

Ingredients

Tomato(chopped) - 1 cup.
Mango (grated) - 1/2 cup.
Jaggery - 1/4 cup.
Chilli powder - 2 tsp.
Mustard seeds - 1/2 tsp.
Hing - 1/8 tsp.
 oil - to fry.


Preparation
  • Chop the tomatoes finely and keep it aside.
  • Grate the mangoes.
  • Powder the jaggery.


Grated Mango

Method
  • Heat the oil, add mustard seeds when it splutters add hing, then add tomatoes.
  • Saute tomatoes till it turns mushy.
  • Then add grated mango saute till it is well cooked.Mangoes takes few minutes to cook.

  • Then add jaggery, saute for 1 -2  minutes, till jaggery melts.
  • Finally add chilli powder and salt. Saute for few minutes till it comes in the form of thokku.

Notes
  • Normally I prefer banglore tomatoes & Parrot beak Mangoes(kili Mooku Mangai) for it.
  • If you want the thokku hot, reduce the quantity of jaggery.
  • Adjust chilli powder according to spice level.
  • This thokku goes well with idli, dosa,chapathi,roti.
  • This goes especially very well with curd Rice.
  •  you can also have it as a spread inside bread.
