South Indian Coconut Rice Recipe - Easy kobbari annam - Thengai sadam

   Coconut Rice is a Popular South Indian Rice Recipe made with Freshly Grated coconut. It is made during festive occasions like Aadi Perukku, Navaratri and Kaanum Pongal. It is also served as Prasadam in Temple. It is an Easy Rice recipe can be made during busy mornings.          

       Coconut has high Dietary Fiber.Dietary fiber helps you to feel for longer, makes it easier to loose weight.It limits the risk of high cholestral,heart disease,certain type of cancer,and other digestive issues.it has a good source of Manganese, manganese is an antioxidant,that prevent damage to your cells and heal wounds.Now we learn to make Easy  Coconut rice.

Coconut Rice

Ingredients

Rice - 1 cup (or) cooked rice/left over rice - 3 cups.
Freshly Grated coconut - 1  + 1/2 cup.
Roasted Peanuts -  3  tbsp.
Cashews - 10.

To temper

Mustard seeds - 1/2 tsp.
Chana dal - 1 tbsp.
Urad dal - 2 tsp. 
Red chillies(Broken) - 4.
Curry leaves - 1 sprig.
oil - to fry.
salt - to taste.


Preparation
  • Cook the rice in such a way that grains are separate.Add a tsp of  any cooking oil, over the rice, and spread it on a wide vessel or a plate, and allow it to cool completely.
  • Grate the Fresh coconut.
  • Remove the skin of  peanuts, and slit it.
  • Fry the cashews in oil, till it turns golden brown, and keep it aside.
Method
  •  Heat the oil  in a kadai/pan, add mustard seeds, when it splutters add chana dal,urad dal, Red chillies,curry leaves.
    • When dal's turns golden brown, add Peanuts saute till, it turns lightly golden brown colour.

    • Then add freshly grated coconut.Saute for a minute.Add salt, mix well.Now switch off the stove.
    • Now add cooked rice & mix Gently. Make sure that coconut  mixes, well with rice.

    • Finally garnish with fried Cashews.
    • Serve with curries, Pappads,kuzhambu or sambar.



    Notes

    • you can make coconut rice, with left over rice also.
    • you can use basmathi rice or plain rice to make this rice.
    • Make sure that cooked rice,should be separate.
    • Add freshly grated coconut, which adds additional taste to coconut rice.
    • Adding Peanuts,gives  nutty taste to rice.
