Varagu Arisi neer dosa - Harka neer dosa - kodo millet neer dosa

Kodo millet neer dosa is made with kodo millet, rice, freshly grated coconut, water and salt. This is a thin crepe with crispness in edges. Rice with  kodo  millet when blended with fresh coconut tastes awesome.Kodo Millet is called  (Hindi: Kodra; Tamil: Varagu; Telugu: Arikelu; Kannada Harka, Koovaragu:Malayalam).Varagu rice is gluten-free and packed with vitamins,fibers and minerals.Kodo  Rice helps in weight reduction. it also fights diabetics, if taken regularly.It is highly nutritious and filling breakfast Recipe.i experimented with neer dosa recipe, it came out well. So i wanted to share the yummy,healthy,dosa recipe with everybody.





                                      Kodo Millet Neer Dosa

 Prep Time : 20 min for grinding. 
 Cook Time : 2 -3  minutes per dosa                  
 Recipe Category:Millets
Yield  : 15 dosa's.

Ingredients

Kodo millet - 1 cup.
Idli rice - 1/2 cup.
Raw rice - 1/2 cup.
Fresh coconut - 1/2 cup.
Salt - needed.
Water - needed.

Preparation

Soak kodo millets,raw rice and idli rice together with needed  water for minimum 4 hrs or overnight.



Method

  • Grind rice and millets together with fresh coconut into a fine paste with needed salt and water.
  • Consistency be little thin like butter milk consistency.



DosaPreparation
  • Heat the tawa, when it is hot, take the batter,in ladle and spread  it in outer corners of tawa.
  • Then fill inner gaps.
  • Drizzle some oil, when it is cooked and lightly turns crisp at the edges, just flip the dosa.

  • Remove from tawa, when both sides are cooked.

Notes

  • Consistency of batter should be like butter milk consistency.
  • If patients are diabetic just omit coconut,taste won't give up.
  • Batter should be ground into a fine paste.

Samai Adai - Little Millet Adai (with drumstick leaves)

Little millet adai is a healthy breakfast recipe made with little millet,toordal,and some spices. I have added drumstick leaves also,which gives extra nutrients too.In india Moraiyo,Kutki, Shavan are some of the names in Hindi for little millet. In Bengali it is called as Sama. In Tamil it is called Samai. In Gujarati Gajro, kuri. In Telugu, it is called as Samalu. In Marathi it is called as Sava, Halvi, vari. In oriya it is called as Suan.Samai suitable for all ages.Good for diabetic patients. Sperm count of men will be improved. Millet contains good quantity of soluble fibers which helps to lower both glucose and cholesterol and hence maintain overall health. Believe me, taste of this adai will be Good.Now we learn to make healthy adai.




 

  Little Millets Adai

 Prep Time : 20 min. 
 Cook Time : 2-3    minutes per dosa

Ingredients

To grind

Little Millet - 2 cup.
Toor dal - 1 cup.
Red chillies - 10.
Cumin seeds - 1/2 tsp.
Pepper corns - 3/4 tsp.
Fennel seeds - 1/4 tsp.
Ginger - 1 inch.
Curry leaves - 1 sprig.

To add after making batter

Mustard seeds - 1 tsp.
Drumstick leaves - 1 bunch.


Preparation

Soak the little millets and toor dal together for minimum  1 hr.

Method

  • Grind everything,  given in a to grind column to a little course batter with needed water and salt.
  • Consistency should be moderate.



  • Add mustard seeds in oil, when it splutters add it to batter.
  • Add drumstick leaves before making adai.

Adai preparation
  • Heat the tawa, when it is hot, just spread the adai, in a circular motion.
  • Drizzle some oil, cover with lid.
  • When it is cooked, flip the dosa, remove from tawa, when both sides are cooked.

Notes

  • Adding drumstick leaves are optional.
  • Adding mustard seeds gives extra taste to adai.
  • After you flip the adai, lid is not necessary to cover adai.
  • I used little Millets, you could use saamai,thinai or varagu arisi.

Home Remedies - Paati Vaithiyam - Natural home remedies

In our indian kitchen, we use lots of spices,herbs,fruits and vegetables in our daily cooking. These spices not only adds taste and flavor to our food. It also has lot of medical values. I have listed out some simple home remedies, that I learnt from my grandmother  and my father, wants to share with you.

The Remedies listed below are for informational purpose only. Always ensure to seek the advice of your physician or qualified health professionals before starting a process.


HOMEREMEDIES

Common cold

           For common cold, drink kasayam twice a day.
  
Kasayam preparation

       Crush 1 Tsp of coriander seeds + 8 pepper corns + 1/2 tsp of cumin seeds + 1/8 tsp of turmeric + 1 inch chopped ginger  + 1 bay leaf, in mortar and pestle, and add it to 1/2 cup of water, and allow it to boil, till it shrinks to 1/8 cup.now kasayam is ready. Have it twice a day.


  • Take sukku(Dry Ginger) + Milagu (Pepper) + Thippili(long Pepper) in equal ratio, and ground it into a   powder, mix it with honey, then have it.Drink 1 glass of  hot water after having it. it was  also a  good relief for cold.

Dry cough
      
    For dry cough, to 1/4 cup of warm milk, add 1/8 tsp of turmeric, mix well and have it before sleep.This mixture is applicable for adults and children also.



Piles
  •  Eat 4 or 5 raw  pearl onions daily, along with food. It keeps away piles disease.
  •  Add more raddishes in your food.


Diarrhea
     Fenugreek is rich in fiber content, which helps in treating diarrhea. Fistful of fenugreek seeds, taken with yogurt, gives faster relief.



Gas trouble
  •   Garlic has properties that simulate gastric system, and help relieve gas and bloating.Boil 10 gms of garlic in a 1/2 cup of milk, till soft, then mash well and drink it, for fast relief.


Minor Burns

  •   Run cool tap water over the burns for 10 - 12 minutes.
  •   If running water not available, immerse it in cold water for 10 - 12 minutes.


Dandruff

  •  To remove dandruff, soak the fenugreek seeds in water overnight, next morning grind it into a fine paste and apply over a scalp. Leave it applied for 30 - 45 minutes, then wash with mild shampoo.
  • Apply little fresh lime juice for washing hair.It's citric acid helps you fight dandruff from the roots of the hair follicles.Lemon slices can also  be directly massaged on the scalp to remove dandruff.

Constipation
  • Fruits and green leaves are highly recommended for controlling constipation. They contain dietary fiber that fights constipation.
  • Regular exercise is an effective home remedy for constipation.
  • Drink more water and maintain water level in a body.
  • Raisins are great for relieving constipation, soak some raisins in water overnight, and next day squeeze well, and have in empty stomach, which help to relieve constipation.


Tooth ache
  •  Grind salt and pepper in equal proportion and apply it over teeth,that  pains.This is a powerful mixture and it has a ability to relieve tooth ache very effectively.



Grind 2 cloves and apply it over tooth that pain,for faster relief.

Good digestion

  • Fennel seeds are highly beneficial in relieving digestive problems, such as indigestion, bloating,constipation.This herb simulates digestion and soothe the digestive track and prevent the formation of gas.Simply chew a tsp of fennel seeds, after a meal aids digestion and relieves stomach pain and bloating.
  •  Grind 1/2 inch of ginger+ 1 tsp of lemon juice+ 8 - 10 raisins with needed water, and drink it twice a day,for better digestion.

Cracked heel

  • Before going to bed,wash your feet well, pat it dry,apply vaseline or petroleum jelly.
  • Mix castor oil, with turmeric to make a paste and apply it over a cracked heel, before going to bed.
Bloating



  •  Add 1/8 tsp of hing, in 1/4 cup of buttermilk, serves as a great natural home remedy for bloating and gas problems.
    • +



    Bad breath
    •  Fennel acts as a natural antimicrobial and other properties, which helps to prevent bad breath.Just chew fennel seeds, after food. They are excellent mouth fresher. It increases salaiva production and help fight germs causing bad breath.

    To control Diabetes
    • Have bittergourd juice in your empty stomach regularly. It controls diabetes.  
    • Take 2- 3 gooseberries, discard their seeds,and grind it into a juice with needed water.Have it regularly on empty stomach.
    Throat pain

    • Prefer pepper rasam or kasayam.it helps to reduce throat pain.
    • Drink hot water regularly, it soothe the throat.

    Ulcer

    • Ulcer can be treated,by intake of butter milk regularly.
    • Ash gourd juice is also a home remedy for ulcer. Cooling property of juice induces relief in acidity and ulcer.

    To reduce body heat
    •  Have tender coconut regularly, to get rid of body heat.
     
    • Soak poppy seeds in water overnight,then next day, grind it with little milk, to a fine paste, and have it in a empty stomach, to reduce body heat.
    • Weekly oil bath, reduces excess heat in body.

     
  •  Dry skin
    Coconut oil is a great skin softener for dry skin condition. Simply take some coconut oil and apply it over dry skin, to get moisturizing effect.  


    To boost immunity


  •     Garlic is one of the best immune boosting food.Regular consumption of garlic helps your body fight infection and inflammatory diseases like cold, rheumatoid arthritis and inflammatory bowel disease. It also lowers blood pressure and cholesterol level.To stay healthy, eat 1 or 2 garlic cloves daily.

  • Acidity

    • Butter milk, contains lactic acid that normalizes, acidity in stomach.
    • Drink a glass of ash gourd juice in empty stomach.
    • Avoid spicy deep fried and junk food.

    To  postpone periods naturally 

    Have handful of fried gram(dalia) and have it in empty stomach.Then have a glass of warm water, to postpone periods.

     To reduce stomach ache during periods

    Take 1 glass of water, in a vessel, when water starts boiling, add 1 tbsp of palm sugar(Pana vellam), when it dissolves, switch off the flame. add a drop of ghee to it. mix and drink when it is warm for good relief.

    crispy Sabudana Dosa /saggubiyyam dosa/javvarisi dosa

    Javvarisi dosa(sabbakki dosa) is prepared with Sabudana grains. They are a source of pure carbohydrate with very little protein, Vitamin C, calcium and minerals.we can prepare very delicious  and very crispy  paper like dosa with sabudana . It gives you a very different taste that you ever had.




    Ingredients   
                                                                   
    idli Rice - 1 cup.
    Sabudana - 1/2 cup.
    Urad dal - 1/4 cup.
    salt - for taste.

    Method
    Soak idli Rice,sabudana,urad dal overnight or 5 to 6 hrs.(soak sabudana seperately and Rice and urad dal seperately )

    Preparation
    • Grind the soaked  idli rice,sabudana(javvarisi),urad dal and salt to gether with needed water.(The consistency should be moderate like dosa batter  consistency).
    • Ferment the batter for 12 hrs or overnight. Then start preparing Dosa's. you get very crispy Dosa's that u ever had.
    • It serves very well with all types of chutneys and podi.

    Spicy Cauliflower Masala Dosa - Gobi Masala Dosa - Cauliflower Roast - Gobi Dosa


    Cauliflower Masala Dosa(Gobi masala Dosa)  is a type of Stuffed Dosa variety.Cauliflower is healthy and yummy veggie.Cauliflower is a heart healthy vegetable. This means it helps in maintaining the heart and the cardiovascular system.it is a rich source of fiber. This fiber helps in lowering our cholesterol levels.Cauliflower also helps us to lose weight. Cauliflower contains vitamin C which is a key element to burn fat. And it also contains folates which again help in weight loss. Now we learn to make healthy and yummy cauliflower dosa.


    Cauliflower Dosa

     Prep Time : 20 min. 
     Cook Time :  20    minutes.

    Ingredients

    Dosa batter - For making dosa's. 

    oil for making dosa 
    Dosa tawa.

    For Making stuffing.

    cauliflower - 1  big.
    onion - 3.
    tomato big - 4.
    cumin seeds - 1/2 tsp.
    Ginger garlic paste - 1 tsp. 
    oil - to fry.


    To Grind 
    fennel seeds - 3/4  tsp.
    coriander seeds - 1 tbsp.
    Coconut - 1/3 cup.
    Red chillies -8.
    Turmeric powder - 1/8 tsp.
    Roasted chanadal(chutney dal) - 1/4 cup.

    Grind everything into a fine paste, with needed water.
       



    Preparation

    Cut the cauliflower into very  small  florets, wash and put them in hot water with a little salt and pinch of  turmeric  for 5-7  mins. Drain the water  and keep it aside.

    Method(Gobi Masala Stuffing preparation)

    • Heat the oil in a kadai/pan, add fennel seeds when it splutters, add chopped onions  add ginger garlic paste,saute till onions turns golden brown.


    • Add tomatoes saute, till it turns mushy.
    • Add  cauliflower florets, saute for 2 minutes, then add ground paste with needed water and salt.

    • Let it boil well till the raw smell in it goes off, and it comes in the form of thick gravy consistency.


    •  Finally garnish with fresh cilantro.


    Dosa preparation
    • Heat the tawa, pour a ladle of batter, and spread it in a cirular motion, drizzle some oil, when it is cooked weel,  spoon with Gobi masala stuffing.


    •  Fold the dosa.Remove it from tawa.serve hot. if you want it with more brown and crisp, drizzle little oil, on folded dosa, and let it cook for few more  minutes.

    Aloo Gobi sabzi Recipe - Cauliflower Potato curry - Cauliflower potato Stir fry

    Aloo Gobi curry is a dry curry made with cauliflower and potatoes. it Goes well with chapathi, roti, rice, mild pulao's, and also as a stuffing for sandwitches, dosa's , burrito's and Quesadilla. 

         Cauliflower is a member of the cancer-fighting cruciferous family of vegetables.Cauliflower is anti-inflammatory and antioxidant-rich, and may boost both your heart and brain health.Eating cauliflower will provide your body with impressive amounts of vitamin C, vitamin k, beta-carotene, and much more while supporting healthy digestion and detoxification. potatoes predominantly contain carbohydrates, they are easy to digest and facilitate digestion.Apart from the vitamins (B-complex, C), minerals and roughage, potatoes also contain certain substances called Carotenoids (lutein, zeaxanthin). Carotenoids are beneficial for heart health and the functioning of other internal organs.Now we learn to make healthy and yummy curry.



    cauliflower potato curry

     Ingredients

    Cauliflower florets - 3 cups (or) medium size cauliflower -  1.
     Potato - 2.
    Ginger garlic paste - 1 tsp.
    Mustard seeds - 1/2 tsp.
    cumin seeds - 1/4 tsp.
    onion - 1.
    salt - to taste.
    oil - to fry.

    Spice powders

    Chilli powder - 1 tsp.
    Garam masala  powder - 1/2 tsp.
    turmeric powder - 1/8 tsp.
    coriander powder - 1 tsp.

    Preparation
    • Chop the onions lengthwise and keep it aside.
    • clean the cauliflower and cut into florets.
    • Cut the potatoes into cubes and put it in water, to avoid discoloration.
    Method
    • Heat the oil, add mustard seeds when it splutters, add cumin seeds, when it sizzles add onions and Ginger garlic paste.
    • Saute till onions turns pink, then add cauliflower florets and cubed potatoes.
    • Saute frequently now and then till veggies are half cooked.
    • Then add all the spice powders and salt. Cook everything in medium flame.Cook it covered,for fast cooking.
    • Saute frequently till veggies are completely cooked . it takes nearly 15 minutes to cook the veggies.
    • Finally Garnish with fresh cilantro.

    Nei Appam Recipe - Karthigai Deepam Recipe - Sweet Ponganalu

    Nei appam is a Sweet Recipe made mainly during Karthigai Deepam, at south Indian Homes. This Appam is made with Rice, Jaggery and coconut. In home we normally make this with kara appam. We also call it as sweet Ponganalu. Ground rice  with jaggery and coconut along with ghee tastes divine. Now we learn to make this authentic recipe.





    Nei Appam Recipe

     Prep Time : 20  min. 
    Cook Time :5 - 7 minutes for each cycle.
    Recipe Category:Festival Recipe
    Yield  :  25. 

    Ingredients 
    Raw Rice - 1 cup.
    Grated Coconut - 1 cup.
    Jaggery - 1 cup.
    Baking Soda - 1 pinch.
    Salt - a Generous Pinch.
    Ghee - as needed.



    Preparation
     Soak the Raw rice for  minimum 3 hrs in water.

    Method
    • Grind Raw rice and Grated coconut into a fine batter, with little water, to a thick paste.
    •  Melt the jaggery with little  water. when  it is melted completely ,filter it, to remove the impurities.Add it to ground rice batter. Then add baking soda and salt.Mix well.Now batter for appam  is ready.
     
    Appam Preparation
    • Heat the paniyaram pan, when it is hot, spoon it with ghee. Then spoon it with batter, in each partition. When it is cooked on one side, you get some holes in paniyaram, then you can flip it with skewer, or spoon or knife.cook in low flame.

    • Cook for few minutes, till paniyaram(ponganalu) turns golden brown. Then remove from pan.Now Nei appam is ready for karthigai deepam.
    Notes
    • Add very little water, to melt jaggery.
    • Consistency of the batter should be little thick, to get good shape.
    • Adding a cup of coconut gives, softness to paniyaram.
    • Fermentation is not necessary for this batter.
