Tomato Thokku - Easy Tomato Pachadi - Side Dish for idli Dosa Chapathi Rice

Tomato Thokku(Thakkali Chutney) is a Very good Combination for idli,dosa,appam,Chapathi,Parathas, Guntaponganalu,Rice,adai,bonda, Curd rice and Uppu Pindi. Very Easy to prepare and taste will be awesome. Tomatoes make your skin look great.The vitamin K and calcium in tomatoes are both very good for strengthening and repairing bones.Tomatoes are a natural cancer fighter.Lycopene  can reduce the risk of several cancers, including prostate, cervical, mouth, pharynx, throat, esophagus, stomach, colon, rectal, prostate and ovarian cancer. Tomatoes’ antioxidants (vitamins A and C) fight the free radicals which can cause cell damage. Tomatoes are a very good source of chromium, which helps to regulate blood sugar.Now we learn Simple Tomato Pachadi.



Ingredients

Ripe Juicy Tomatoes - 4.
Garlic - 2.(finely Chopped).
salt - as required.
Chilli Powder - 1+ 1/4 tsp.
urad dal - 1/2 tsp.
oil -  1 tbsp.(preferably Sesame oil).
turmeric - 1/8 tsp.

Preparation

Boil the tomatoes in bowl of  hot water, till you get wrinkles in the skin. Then switch of the flame. Remove the skin of tomatoes, Then grind it into a smooth paste.

Method

  • Heat 1 tbsp of oil, add mustard seeds, when it crackles, add urad dal and finely chopped garlic.
  • When dals and garlic turns golden brown colour, add tomato puree, chilli powder and turmeric Powder.
  • Saute now and then, When tomato puree is almost thick, add salt. Mix well.
  • Then add 1 tbsp of oil, saute for few seconds, till oil oozes out and it leaves the sides of kadai and comes out in the form of thick thokku. 
          Now Thokku is ready.

Note
  • Add salt, after  the gravy thickens, else boiling water will  Splutters  out.
  • It serves 3 people. you could make in large quantity and store it in a containter and refrigerate it.
  • it is an apt side dish to take for tour.

Easy Christmas Cake - Christmas Fruit cake - Christmas Cake

Christmas cake is a type of fruitcake served at Christmas time in many countries.A Christmas cake may be light or dark, crumbly-moist to sticky-wet, spongy to heavy, leavened or unleavened, shaped round, square or oblong as whole cakes, fairy cakes,  with marzipan, icing, glazing, dusting with icing sugar, or plain.(Wikipedia).This Cake is a crunchy Wet Cake, made with dry fruits and cherries. This Christmas fruit cake can be made with Simple Steps and available ingredients in home.Beginners could try this cake for Christmas.

Ingredients


All Purpose flour  - 1/2 cup.
Sugar - 1/2 cup.                     

Eggs - 2.
Maraschino Cherries - 10.
Vanilla Essence - 1 tsp.
baking powder - 1/4 tsp.
Salt - 1/4 tsp.
Nuts of your choice - 1 cup.
[i used Cashews+Walnuts + Almonds
you could use nuts of your choice like Pecans, Hazelnuts or pistachios]




Preparation

  • Chop the nuts into small pieces.
  • Grease the cake tray with butter, then sprinkle APF upon it and pat it, to spread the flour evenly.

Method

  • Take a large Vessel, combine, All purpose flour, Baking Powder, Salt, Sugar.
  • Add chopped nuts and Maraschino Cherries. mix well ,till nuts are well coated in the flour mixture.
  •  Beat the Eggs well till it is frothy with vanilla essence. it takes nearly 10 minutes to beat in hand mixer to get that consistency.


  • Add the beaten eggs  to flour Mixture. Mix well.Now cake Mixture is ready.



  • Preheat the oven for 375 °F for 10 minutes.


  • Then pour the Cake Mixture to Greased tray and bake for 25 minutes with same 375 °F, until a toothpick inserted near the centre  comes out clean.Cool for 10 minutes before removing from pan.
  •  Now Crunchy Yummy Cake for christmas is Ready to serve.

  • According to your taste buds,instead of Maraschino Cherries you could replace with handful of  candied fruits/ glazed fruits ,or  you could also replace with  tuttifruitti of your choice.

SAKKARAI PONGAL RECIPE - SWEET PONGAL - SANKRANTI SWEET RECIPE

Pongal is a harvest festival of hindu, that follows a solar calendar and it is celebrated on 14th of janauary every year. This harvest festival is celebrated all over India with some Regional variations,known by different names and celebrated with different customs in different parts of the contry. It is celebrated as Makar sankranthi in many states of India such as Andhra Pradesh, Bihar, Chhattisgarh, Goa, Haryana, Jharkhand, Karnataka,Madhya Pradesh, Maharashtra, Manipur, Odisha, Rajasthan, Sikkim, Uttar Pradesh, Uttarakhand and West Bengal.(Wiki) Sakkarai Pongal (Thiyya Pongal) is made during this festival Occasion in South India. Freshly harvested Rice with Jaggery and Ghee makes a  Pongal divine.

Prep Time : 5 minutes. 
Cook Time : 20 minutes .

Ingredients
Rice - 1/2 cup.
Moongdal - 1/4 cup.
Jaggery - 1  cup.
Water - 2  + 1/2 cups.
Salt - a pinch.
Ghee - 1/4 cup + 1 tsp(for roasting Cashew nuts and Raisins).

Tempering
Cashews - 12.
Raisins  - 10.

Preparation
  • Soak Rice  and Moong dal together for 15 minutes. 
  • Melt the Jaggery with little water in a vessel, and filter it to remove impurities, and keep it aside.Now Jaggery Syrup is ready.
Method
  • Pressure cook Rice and Moongdal together with 2 + 1/2 cups of water  for 1 whistle, then keep it in Sim mode for 5 minutes.Then switch off the flame.
  • When pressure subsides, open the lid and mash well.
  • Now switch on the stove. Add Jaggery syrup,then pinch of salt.Mix well.
  • Add 1/4 cup of Ghee  little by little and mix well.
  • Pongal leaves  the sides of the kadai.Finally Garnish with Cashews and Raisins.

Kids Candy Cookies - With Step Wise Pictures - Choclate Topped Cookies

Christmas is Nearing by. Planned to Post cookies for Kids With Candies.Some Interesting facts about cookies.  How the Cookies born?Early bakers used very small amounts of batter to test the oven temperature before baking a cake. These little test cakes were called koekje, which means "little cake" in Dutch. The crispy little circles were so tasty, the bakers started making them on purpose and the cookie was born.(how stuffs Work.com). Cookies were first made in Persia around 7a.d.(Persia is now Iran). Now we learn to make kids candy cookies.

Ingredients

All purpose Flour - 1 + 1/4 cup.
butter - 1/2 cup.
sugar - 1/2 cup.
Egg - 1.
salt - 1/8 tsp.
Vanilla Essence - 1 tsp. 

Choclates of your choice

 I used M& M, hersheys milk choclate(chopped into pieces) and kisses.
You could also use any choclates like Gems, dairy milk and so on.

Before you start making cookies, bring everything to room temperature. it is the important step in baking.



Method
  • Beat the Butter till it is soft.
  • Then add sugar to butter and beat till it is light and fluffy.
  



  • Then add egg and Vanilla essence, beat till it is well combined.
  • Finally add flour and beat for few seconds till everthing is combined.Then use your hands to make the dough.
  • Divide the dough into two equal portions, Make the Dough as Log, wrap it in plastic cover, as shown in the picture.
  • Then refrigerate it for minimum  1  hr, to make the dough firm.
  • Then cut the log  into 1/4 inch bars  and place it in cookies sheet with 1 inch apart.
  • Then stick choclates of your choice, upon it.


  • Preheat the oven for 375 F (180 deg)  for 10 min.
  • Then place the cookies sheet and bake for 8 - 10 min with Same 375 F. Cookies turns  to  golden brown colour  at the edges, and you get nice aroma(smell) of cookies. Then it is the right stage to take  cookies sheet out from oven, let it sit aside for 5 to 7 min, cookies becomes crisp. Then you can transfer it to air tight container. We can store it , for about a week.

MASALA PASTA RECIPE - SPICY INDIAN MASALA PASTA - FARFALLE PASTA

Masala  Pasta is an Indian based  Italian pasta Recipe made with cooked pasta tossed in Tomato Sauce with some Spice Powders. My husband is a big fan of this Masala Pasta.Weekly once i make this pasta.

 Ingredients


Pasta  of your choice- 2 cups.


Onion - 2.

Juicy Tomatoes  - 3.
Garlic - 4
chilli powder - 3/4  tsp.
Coriander Powder - 1 tsp.
Salt - for taste.
cilantro - 2 tbsp(chopped).
Olive oil - 1 tbsp.
oregano - 1/2 tsp.(optional)





Preparation


Cook the pasta, as per instructions, I took a large wide vessel and allowed water to boil, when water water starts boiling, add  pasta, allow  it to to cook, till pasta is soft and firm to bite.(u could check it by having a bite).Then drain  it in colander and kept  it  aside.


Blanch the tomatoes:Allow the water to boil, in  a vessel, when water starts boiling, add tomatoes, cook it, till you get crack in tomatoes, when it cools down, remove the skin of tomotoes, then grind it in a mixie into a smooth paste.Now tomato Puree is ready.






Method


Heat the oil, add Garlic, when it turns Golden Brown, add onions,when it turns golden brown colour, add tomato puree, chilli powder,coriander powder, salt, and chopped cilantro.Mixwell.






When puree starts boiling add cooked pasta, Mix well. Garnish with  oregano. Serve Hot.Now Simple yummy tasty  pasta is ready to Serve.




 Notes

  •  Cook the pasta till al dente (Cook pasta, with firm to bite).
  • I used the Pasta Type farfalle, you could use any pasta type such as penne, Rotini,cellentani, route(cartwheels) and so on. Farfalle are best suited to cream and tomato dishes.
  • you can also add 1 carrot, 1/4 capsicum & hand ful of Green peas after adding onions, cook till soft then add tomato puree.
  • Always choose juicy tomatoes to get better taste.
  • Adding cliantro gives extra flavour to pasta.
  • Serve the pasta hot.

Bendakaya kura - Easy bhindi subzi - Quick Ladies finger curry

  Bendakaya vepudu(okra Fry) can be prepared quickly. This goes very well with rice and chapati.Tangy bhindi curry goes very well with Andra Pappu  and Pappu pulusu. The low calorie content of Okra and its high fiber content makes it a suitable food for weight loss. fiber content of ladys finger helps in better digestion, and regularization of bowels. Okra contains folic acid / folate. Lady finger is an absolutely important food for ladies who are willing to conceive. Another important benefit of lady finger is that it contains Vitamin  C which helps in improving immunity. They are an also good source of many important minerals such as iron, calcium, manganese and magnesium.






Ingredients 

Ladies Finger  - 30 - 35.
mustard seeds - 1/2 tsp.
tamarind - small amla size.
chilli powder - 1 tsp.
corinader powder - 1 tsp.
salt - as required.

Preparation

Soak the Tamarind in 1/2 cup of water, when is soaked well,squeeze the tamarind, to extract juice, then  retain the water and throw the pulp.

chop the bendakaya(ladies finger) into thin circles. 

Method

  •  Heat the oil, add mustard when it splutters add okra and saute for 5 minutes.
 
  • Then add tamarind extract( okras should completely immersed in tamarind water).

  • Let it boil for few minutes, stir now and then.
  • When water is almost absorbed, add corinader powder,chilli powder and salt.
  • Saute for 10 more minutes, Occasionally, till bhindi is completely soft.
  • Transfer to serving bowl . It  is a well accompaniment for  rice and chapati.

Pesarattu Dosa Recipe - With Dosa Batter - Moongdal Dosa


    
Pesarratu is Very quickly prepared with left over dosa batter.Green gram is used as a digestive, nutritive and aperient. It is good for pregnancy and breast feeding women, as well as children. Eating Green gram regularly increases lactation, helps one to get the required nutrition and promotes well being.Since Green gram are nutritive we prepare Delicious and crispy Pesarratu from it.

  



Ingredients
Green Gram dal - 3/4 cup.    
Idli/Dosa Batter - 1/2 cup.[refer my link for idli/dosa batter].
jeera (cumin seeds) - 1 tsp.
green chillies - 3
Pearl  onion -10
chopped onion - 2.
ginger - 1/2 tsp.

Preparation

  Soak Green Gram 4 to 5 hours or overnight.

Method
  • Grind Green gram,Jeera,green chillies,ginger,Pearl  onions  in a blender with little water.
  • Take a mixing bowl add Dosa batter, salt and ground green gram mixture  to gether,stir  well.
  • Pour Dosa like normal Dosa.drizzle some oil.
  • Sprinkle some onions upon it,then onion will stick to batter,latter flip the dosa when one side is cooked.
  • when both sides are cooked remove from tawa and serve hot.
  • It goes very well with onion chutney, coriander chutney,  coconut chutney,Allam chutney and tomato chutney.

Butter Cookies - Easy Butter Cookies - With Pictures - Simple Method


Holiday Season have started, so i planned to Post Butter Cookies. Butter Cookies is made With flour,Butter  and Sugar. Butter Cookies are made with different shapes as our Wish. They can be made like circle,square,oval, rings,pretzel  like shape and so on. This recipe is taught my friend Pinky. This is a Simple,Easy and Delicious Cookie Recipe, Beginners can try this simple Recipe. if they are about to start baking. once you started making Cookies you can make lots of variations with this recipe. This cookies could also made during christmas times.


Ingredients

All purpose Flour - 1 + 1/4 cup.
butter - 1/2 cup.
sugar - 1/2 cup.
Egg - 1.
salt - 1/8 tsp.
Vanilla Essence - 1 tsp.
