Chivda Recipe - Avalakki Mixture - Atukula Mixture - Aval Mixture



Poha Mixture is a low Calories Snack. It is a very easy snack Recipe prepared in Jiffy.This Chivda requires little oil, not require to deep fry .  Poha is a  easily digestible form of raw rice is very popular across Nepal, India and Bangladesh.Poha is called by different names in India. Poha is called Aval in Tamil, Atukulu in Telugu,Avalakki in Kannada,Chindé in Bengali and parts of Bihar and Jharkhand, Chira in Assamese, Chudaa in Oriya, Chiura  in Nepali, Bhojpuri and Chhattisgarhi, Poha or Pauwa in Hindi, Baji in Newari, Pohe in Marathi, Phovu in Konkani, and Pauaa/Paunva  in Gujarati.This chivda is made during Diwali and Krishna Jayanthi Occasions.


Chivda Recipe




Ingredients

Thin Poha - 2 cups.
Roasted Chana dal - 1/2 cup.
Roasted Peanuts - 1/2 cup
cashews - 15.(optional)
curry leaves - few.
Mustard seeds - 1/2 tsp.
hing - Generous Pinch.
Turmeric - 1/8 tsp.
salt - as required.
chilli powder - 1 tsp.
Curd Chillies - 2.(optional)
Red chillies - 2
oil - 2 tbsp 

Preparation
  • Saute thin poha in 2 tsp of oil, for 8 - 9 minutes, till it turns crisp. Then keep it aside.

Method
  • Heat the oil, add mustard seeds, when it splutters, add curry leaves, red chillies, curd chillies, Roasted Peanuts, Roasted chanadal,cashews  saute till dals turns golden brown colour and crisp.


  • Then add , turmeric powder, chillipowder, hing, salt, saute for few seconds, till everything combines.

 








  • Finally add Sauted Poha and Mix everything. Now Simple and quick Chivda is ready.

Kaju Katli is an Indian Popular Sweet made with Cashews and Sugar.We Will learn Very Simple Method to do Kaju katli, without Making Sugar Syrup. Beginners can try this.Don't Want to afraid for sugar strings.Taste will be  very delicious, like  we get in Shops. Delicately sweet yet crunchy and delicious cashew nut is packed with energy, antioxidants, minerals and vitamins that are essential for robust health.Cashew nuts are native to Brazil, but are now grown all over the world.Now We learn Simple Kaju katli.

Ingredients

Cashews - 1 cup (Whole Cashews are Preferable)

Sugar - 1/2 cup.
Water - as required. (5 tbsp)
 Ghee - 1 tbsp.
 
Method
  • Dry Roast the Cashews, with Medium low flame for 4 - 5 Minutes, Which gives crispness to cashews.
  • Then cool the cashews completely. Then grind it into a Powder in a blender or Mixie. This is the important Step while making katli's. Also don't Grind for longer time, it oozes oil.

  • Take  thick bottomed kadai,heat the kadai, keep flame to Medium low, add  sugar with 5 tbsp of water.
  • When  Sugar dissolves,not necessary for any string consistency.if sugar melts that is enough.
  •  when water starts bubbling, add cashew powder. Mix well.

  • Stir  for few minutes till it  becomes thick, and it leaves the sides of kadai as shown in the picture. add a tbsp of Ghee.Give a quick mix.


  • Then  immediately pour the dough  over a plate.  Then flatten it with Spachula as shown in above picture. 


  • Then cut into desired shape, when it is little warm. Now Simple Kaju Katli is Ready.
 Notes
  • Once it comes in the form of soft dough and leaves the sides of kadai, pour immediately over a plate, then flatten it  . Once it cools down it becomes crisp automatically.

Palkova - Therati Paal - Palgova - Diwali Sweet Recipes

Palkova is a Simple and Easy Sweet Recipe. it takes long time to Make.But the Procedure is Simple and the taste is awesome.Begginers can try this Sweet Recipe. Milk is a great source of calcium, which is essential for healthy bones.Milk contains protein, which helps to rebuild muscles.Vitamins A and B in milk can help build good eyesight. Milk has also been show to help lower risk of certain cancers.Now We learn to Make Delicious Palakova.

Ingredients
Milk - 4 cups. (Fat Milk is preferable, i used Whole Milk).
Sugar - 1/4 cup.
Ghee - 1 tsp.

Method
  • Take a thick bottomed Vessel or Nonstick pan,add 4 cups of Milk.


  • Allow it to boil, Once got boiled, keep the flame in medium low. Then stir frequently till it becomes thick.Take care there is a chances of burning the Milk.
  • You may get the milk sticking to the sides of kadai, scrap it using the ladle, and add it to boiling milk.
  • Once it becomes thick, add sugar,stir well till continuously, till  it becomes thick and leaves the sides of kadai.

  • Finally add 1 tsp of ghee and mix well. Remove from the flame.


  •  Delicious Pal kova is ready.

Apple Halwa - Step Wise Pictures - Easy Diwali Sweet Recipes


Apple Halwa is a Simple and distinct Diwali Recipe.There is a Well known Proverb "Apple a Day keeps the Doctor away". Apples are packed with vitamins C, A, and flavonoids and with smaller amounts of phosphorus, iron and calcium.Apples provide a source of potassium which may promote heart health.There are more  than 7,500 varieties of apples.Fuji,Gala and Red delicious Apples are common Varieties available here. Now We make healthy and Delicious Apple.

Apple Halwa
Ingredients
Apple - 3.
Sugar - 1 cup.
Ghee - 3 tbsp.
Cashews - 12.
Kesari Powder - As Required.(Add based on colour you require)
Milk - 1/4 cup

Preparation
  • Peel the skin of Apples, scoop out the seeds, and chop the apples into cubes.Grind with 1/4 cup of Milk into a fine Puree.
  • Saute the cashews in Ghee, till it turns golden brown colour and take the cashews out from kadai.

Method
  •   In the same Kadai, add  Apple puree, saute it till water in it is absorbed, and it is some what dry.It takes 15 minutes to cook.cook in Medium flame.

  • This is the right stage to Add sugar, Now add sugar and stir well, till it leaves the sides of kadai,Ghee oozes out, and it comes in the form of halwa.
  • Finally add Cashews and Mix well.
 
  • Now Delicious Apple halwa is ready.

Rava Ladoo - Rave Unde - Rava Laddu - Easy Diwali Sweet

Rava Ladoo is a Simple and  Easy Diwali Sweet.It is made with Semolina, cashews, and Ghee.Rava Laddu is an authentic Indian Sweet made during Occasions Such as Diwali, Krishna Jayanthi and Some Special Occasions.


Ingredients

Semolina/Rava   -  1 cup.
Sugar - 1/2 cup.
Milk - as required.
cashews - 15.
Ghee - 2 tbsp.
coconut - 1/4 cup (grated).

Preparation
  • Mix Rava and coconut with Milk into a thick dough. I have added nearly 1/2 cup of milk.cover it with a lid to maintain moisture. let it sit aside for 1/2 an hour. This Method gives softness to Rava/Sooji.


Method

  • Heat the Ghee, when it is hot, add cashews saute till it turns golden brown colour, crumble the dough and add to it, saute it, till it turns slighly brown and you get good aroma(smell) of semolina, add sugar.cook it in low flame.

  • Saute for 3 to 4 minutes till the sugar dissolves, and everything comes to gether in the form of thick  mixture. It should maintain its moisture. it should hold in hand. Then remove it from flame.

  • When it is hot make lemon sized balls. Now Rava ladoo is ready.

Tiffin Sambar Recipe - Hotel Style Tiffin Sambar - Idli Sambar Recipe - For idli,Dosa & Pongal

This tiffin Sambar  goes very well with Idli, dosa,pongal and ulundu vadai(Garelu). The taste of sambar is derived from the spices used in it. This is a hotel style tiffin sambar with Pictures . Toor dal is one of most important ingredient used in preparing the popular south Indian dish  sambar .Toor dal or Tur dal is staple food in Indian cuisine.Tur dal is one of most prominent lentil among all the others available and exhibits a thick gelatinous meaty consistency.It is easily digestible and absorbs the flavor of other spices quickly.

Ingredients 

Toor Dal - 1/3 cup.
drumstick - 2. [chopped].
Pearl  onions - 10.
tomato(big) - 1.

tamarind - small amla size.
turmeric - 1 pinch.
oil - to fry.
salt - to taste.

To Make Paste
 

Toor dal - 1 tbsp.
channa dal - 1/2 tbsp.
cumin seeds - 1/2 tsp 
Red chillies - 6.
coriander seeds - 1 tbsp.
curry leaves - 6.
coconut- 3 tbsp.
fenu greek seeds - 1/4 tsp.
oil - to fry.

Dry Roast all the ingredients,except coconut in a kadai, till it turns Golden brown.switch off the flame. Add coconut. it cooks in the heat of kadai. 
Then grind everything  in a blender or mixie  with a little  water into a fine paste.




Seasoning 

Mustard seeds - 1 tsp.
curry leaves - 1 sprig.
red chilly -1.
hing - 1/4 tsp.
Ghee - 1 tsp.

Preparation
  • pressure cook the toor dal with a pinch of turmeric in a needed water until it turns mushy.
  •  prepare tamarind extract,by soaking tamarind in little water for 1 hour. Then squeeze the tamarind,throw the pulp & retain the water. 
Method
  • Heat the oil, add  mustard seeds, when it splutters add Pearl  onions,then add tomato,add drumstick saute well for few minutes.Then add needed water, let it boil till the drumstick is soft.


  • Add ground paste stir well.
  • When it starts boiling,add cooked toor dal .Then add salt ,stir well.
  • Finally add tamarind extract let it boil for few seconds, till the raw smell goes.
  •  In a mean while,  heat the Ghee  in a kadai,add mustard seeds when  it splutters, add curry leaves ,red chillies,hing  saute it and add to sambar.Now sambar is ready.


  • It goes very well with idli, dosa,pongal and ulundu vadai.

Home Made Ginger Garlic Paste - How to Make allam velluli mudda - Allam velluli mudda

Ginger garlic Paste is an essential  ingredient in most of our cooking.It is a handy Ingredient in busy world.Garlic and ginger are two herbs that possess many little-known therapeutic uses and health benefits, alongside their more common uses in the kitchen. Both of these herbs have been studied for their effectiveness in fighting infections, preventing cancer and reducing inflammation and various other applications.Both garlic and ginger are thought to have anti-inflammatory properties.Garlic and ginger are both effective at fighting and preventing a wide range of cancer-related issues as well. ginger and garlic are effective in lowering blood pressure and limiting cholesterol.


Ingredients

Garlic - 1 cup.
Ginger - 1 cup.
oil - 1 tbsp.

Preparation
  • Soak the Ginger in water for half an hour to one hour for easy peeling.Then pat it dry.
  • Peel Ginger and Garlic.
  • Chop the ginger and garlic into cubes.


Method
  • Grind ginger and garlic in a blender or mixie along   with oil into a smooth paste.
  • Store it in a Air tight container. Use dry spoon.

Note
  • If you refrigerate it, it comes for few weeks to month.
  • Always use dry spoon. Never use your hand, always use spoon to scoop it out.
  • After you have taken the required quantity, refrigerate it immediately.
  • if you handle it properly it comes for even months.
