Simple Paneer Bhurji - Easy Paneer bhurji - How to Make Paneer bhurji

Paneer bhurji is a simple Paneer recipe, made with crumbled paneer and capsicum. it Goes well with rice, mild pulao's, jeera rice, chapathi and roti. it also goes as a Good stuffing inside sandwitches, chapathi's, roti, burrito's and quesadilla's.

   Paneer is a great source of calcium, which is helpful in maintaining strong teeth and bones. Paneer provides the protection against cancer. The presence of conjugated linoleic acid and sphingolipids in Paneer makes it effective in preventing cancer.  Paneer is also known to enhance blood. Bell peppers are good sources of potassium. This mineral helps in keeping the fluids and minerals balanced in the body. It enhances muscle function and regulates blood pressure.Green bell pepper has a high content of natural silicon, which may support healthy hair and nails.Now we learn to make simple Easy Paneer recipe.


Paneer Bhurji


Ingredients

Paneer   (crumbled or grated) - 1 cup.
onion - 1.
Ginger garlic paste - 1 tsp.
tomato - 1.
capsicum (green pepper) - 1/2.

Garam masala - 1/2  tsp.
cumin seeds - 1/2 tsp.
chilli powder - 3/4 tsp.
coriander powder - 1 tsp.
water - 2 tbsp.
salt - for taste.
oil - to fry.
cilantro(for garnishing)


Preparation

Thaw the paneer, then crumble or grate the paneer and keep it aside.
chop the capsicum  into cubes.

 Method

  • Heat the oil, add jeera(cumin seeds), when it splutters, add onion, add ginger garlic paste saute well,till onion turns pink.
  • Add tomato saute well, till it turns  mushy.


  • Add cubed  capsicum saute for very 2 - 3  minutes( capsicum should maintain its crunchiness).


  • Now add coriander powder,chilli powder,garam masala  and salt.Mix well.
  • Add crumbled or grated paneer,  then add 2 tbsp of water, saute for 2 more minutes,  till everything gets incorporated and comes in the form of dry curry.


  • Now garnish with  fresh cilantro. It goes very well with chapati,roti,jeera rice,pulao's and fried rice .

Instant Onion tomato thokku - tomato onion thokku - thakkali vengayam thokku - tomato ullipaya thokku

 Onion tomato  thokku preparation is very instant and Easy recipe. It goes very well with chapati, idli,dosa chapathi,paratha's and roti varieties.Onions are good sources of several vitamins, and in particular vitamin A, vitamin C and vitamin E.onion has folic content in it, which regulates some system in body. Tomatoes are a rich source of potassium; Tomatoes work against impotency and help increase the sperm count. Tomatoes are powerful blood purifiers and clear up urinary tract infections.Now we prepare simple onion tomato thokku.




Ingredients

onion - 3.
tomato - 3. 
chilli powder - 1 tsp.
salt - needed
oil - to fry.
mustard seeds - 1/2 tsp.

Preparation

Chop the onions and tomatoes finely.

Method
  • Heat the oil, add mustard seeds when it splutters, add onion saute well till it turns golden brown.

  • Now add tomatoes saute well till mushy,add chilli powder and salt.
  • saute well till oil seperates and  it comes in a form of thokku.

  • It goes very well with chapati, idli and dosa.


Notes
  • Sauting  the onions till golden brown, and sauting tomatoes till mushy is an important step in this thokku.

Soft Idiyappam - Idiyappam Varieties - Sevai - Nool Puttu


Idiyappam is a Popular Recipe made with Rice flour.Idiyappam is  served as a Main Course in South  Indian foods. It is a low calorie diet. Idiyappam is also called Nool Puttu,Sevai,Shavige, Semige, string hoppers or Rice Noodles.

Ingredients

Rice flour/idiyappam flour  - 1 cup.
salt - needed.
water - 1 + 1/4 cup.
oil - 1 tsp.
 



Method
  • Add Water in a pan.Then add salt &  oil.
  • When it becomes rolling boil, switch off  the stove.
  • Add  Rice flour in one hand, keep on stirring water in other.mix well.Make sure it does not have lumps in it.
  • When it cools down again knead it well.Now dough is ready.


 
  • Take idiyappam Maker,fill 3/4 of maker, with dough, then squeeze it over Greased idli plates and steam cook it   8 to 10 minutes.Make sure that, idli plates should be placed in a steamer, when water in it comes to rolling boil.



  • Within few minutes, you get , soft and smooth idiyappam.



Instant Idiyappam 


  • Get the rice noodles from market.
  • Take a big pan/kadai, add more  water, and  allow the water to boil.
  •  when the water starts boiling, add rice noodles to it. cook it, till it becomes soft.
  • Then drain it, in the colander. Instant idiyappam is ready.

 Now basic idiyappam can be served with any of these dishes such as Kadalai curry,coconut chutney,coconut Milk,sodhi and vegetable korma .

Spicy Kadalai Curry - Kala channa Korma - Black Chick Peas Korma

Ingredients

Onion - 1 .
tomato - 1.
Black chick peas - 1/2 cup
Salt - for taste.
oil - to fry.
mustard seeds - 1/2 tsp

To grind

 
small Onion - 5.
garlic - 2
ginger - 1 inch.
coconut - 3 tbsp.
fennel seeds - 1/4 tsp
garam masala - 1/2 tsp.
chilli powder - 3/4 tsp.
grind everything including  1 tbsp of cooked black chick peas(Which gives thickness to gravy).





Preparation

Soak black chick peas overnight and pressure cook for 7 to 8 whistles.

Method

Heat the oil, add mustard seeds when it splutters add onion and tomatoes saute well till it becomes mushy.
Add ground paste ,stir well for 5 to 10 min till raw smell goes .
Now add cooked black chick peas with needed water and salt allow it to boil for few min till it becomes a thick gravy.
garnish with cilantro.
It goes very with kolaputtu,chapati and dosa.

Javvarisi Upma - Sabudana Khichdi - Saggubiyyam Upma

Javvarisi Upma(sabbakki Upma) is a Quick recipe.Bachelors and Office Goers can prepare this as a Tiffin recipe. Sabudana(Saggubiyyam) is full of starch or carbohydrates and is great for a quick boost of energy, and hence often served in India for breaking fasts during religious festivals.  According to "The New Oxford Book of Food Plants," traditional Indian medicine uses sago in combination with rice to cool the body. Therefore, sago can function as an herbal remedy to treat ailments resulting from too much heat, such as the production of excess bile. Sago is also used in traditional medicine outside the Indian subcontinent in Sri Lanka, New Guinea and other Asian Pacific countries.


Sago upma


Ingredients

Javvarisi(Sago) - 1 cup.(pick smaller sized pearl sago(nylon sago) )
Mustard seeds - 1 tsp.
chana dal - 1 tsp.
urad dal - 1 tsp.
curry leaves - 12.
green chillies - 5 or 6.
salt - to taste.
oil - to fry.
Moong dal - 1/4 cup.
lemon juice - 1 tbsp.(optional)
cilantro or coriander leaves.

Method

Soak the Javvarisi in Water Overnight.[Next day if there is any excess water drain it and keep it aside].
Pressure cook the Moong dal for 3 whistles or cook in a bowl with needed water till it becomes Soft.



Saggubiyyam Upma


Preparation


  • Heat the oil, add Mustard seeds when it splutters add chana dal,urad dal, slit greenchillies and curry leaves.saute well.
  • Now add Sago(javvarisi) and saute for 5 to 10 minutes till sago turns colour from white to some shiny texture.











  • Now add Cooked Moong dal and Mix Well.
  • Switch off the stove, then add lemon juice. garnish with cilantro. Serve hot.

Rice Roti - With Left over rice - Akki Roti - with step wise pictures

Akki roti is a rice based soft roti made with rice flour cumin seeds, onions, coriander leaves and green chillies. It is a popular karnataka recipe. Along with rice flour i have added some cooked rice to make it soft and even more tasty. if you have rice left overs you could make delicious roti for your  breakfast.



Ingredients

Rice flour - 1 + 2/3 cup.
Cooked Rice - 1 cup.
cilantro - 1/4 bunch.
onion - 1 big.
Green chillies - 7
cumin seeds - 1/2 tsp.
coconut grated - 1/4 cup.
salt - for taste.
oil.

Preparation
  • Chop the onions and cilantro   finely.
  • Grind Cooked rice,salt,green chillies and cumin seeds in a blender into a fine puree .

Method

Take a mixing bowl add rice flour, cooked rice paste, chopped onions,coriander leaves,green chillies,cumin seeds  and grated coconut, mix well by drizzling little water into soft and spreadable dough.



  • Take a plastic sheet or banana leaf  grease with oil, take big ball sized dough and pat it into a circular disc, in between wet your hands in bowl of water. 

  • Heat the tawa, when it is hot,place the circular disc over the tawa, drizzle some oil.
  • cook it , till both the sides turns golden brown colour then remove it from tawa.Serve hot.


Note

Adjust the quantity of rice flour, according to the consistency of the dough.

Mudakkathan Keerai dosa

 Prep Time : 15min. 
 Cook Time :  3 minutes per dosa.

Ingredients

Raw rice  - 1 cup.
Idli rice - 1 cup.
Mudakathan keerai /buddakakara - 1 bunch tightly packed.
salt - needed. 


  Method

         Soak idli Rice & Raw Rice for 4 hours.
  • Grind Soaked raw rice and idli rice with needed water and salt. Add Mudakathan keerai with it.
  • Add salt to it.Grind it to a fine batter.
  • Consistency should be moderate.
  • Ferment it overnight.
 

  • Heat the tawa, pour the ladle of batter at the edges,in a circular motion, batter will automatically fill the centre portion.drizzle some oil on it. 


  • when it is cooked on one side,turn the dosa, when it is cooked on both the sides remove it from tawa.you get crispy Dosa.




  • It goes well with Coconut Chutney, podi,onion chutney and tomato chutney.
