Curry leaves dosa is made with curry leaves and rice.This is an authentic vysyas Recipe. Curry leaves are natural flavouring agents with several health benefits, making your food healthy and tasty along with pleasing aroma.We prepare a healthy curry leaves dosa(karivey paku Dosa) .Curry leaves  contain antioxidant properties and have the ability to control diarrhoea, gastrointestinal problems such as indigestion, excessive acid secretion, peptic ulcers, dysentery, diabetes and bad cholesterol. They are also believed to have cancer fighting properties and known to help protect liver.Now we learn to make healthy dosa recipe.

Ingredients

Raw rice - 1 cup.
Idli rice - 1 cup
curry leaves - 2 cups.
urad dal - 1/4 cup.
salt - to taste.






Preparation

Soak raw rice, idli rice and urad dal together for 4 to 5 hrs.

Method

  • Grind Soaked rice,urad dal,curry leaves,and salt with needed water into a fine batter.
  • Consistency should be moderate.(Not too thicker or too thinner).Allow the batter to ferment for 12 hrs.
  • Pour like normal dosa.  
  • It goes well with all types of chutney.

Baby Corn Gravy - baby Corn Peas Masala - Baby Corn Mutter Masala

Baby Corn is a good source of folate or folic acid.it is rich in proteins,Vitamins and iron and richest source of   Phosphorous.Baby corn is rich in fibrous protein and it is easily digestable.Green peas also improves Metabolism of Proteins,carbohydrates and fats.Now we prepare delicious Baby Corn Green peas Masala.It goes very well with Roti, chapathi's,pulav's,jeera rice and fried rice.



Baby Corn Masala
Ingredients

Baby Corn - 8.
Peas - 1/4 cup.
salt - to taste.
turmeric - generous pinch.
ginger garlic paste - 1/2 tsp.
chilli powder - 1 tsp.
coriander powder - 1 tsp.
garam masala - 1/2 tsp.(optional)
oil - fry.

To Saute and Grind

Onion - 1.
bang'lore Tomato - 2.
cinammon sticks - 1.
cloves - 2.
fennel seeds - 1/4 tsp.
cashews - 10.

Saute chopped  Onion for few minutes then saute chopped tomatoes saute well,add cinammon sticks,cloves,fennel seeds to it and saute well till every thing becomes mushy.grind  sauted items along with cashews(as such)  into a Smooth paste with needed water.

Preparation

Cut baby corn vertically and chop into 1 inch pieces as shown in above picture.
Take water in a kadai add baby corns, then add needed water, little salt and turmeric.let it boil for 10 minutes. crunchyness should be maintained.Drain the water and keep baby corns  aside.
Take peas and cook it similarly by adding water in kadai, till it becomes soft and keep it aside.

Method

  • Take a kadai add oil when it it hot, add ginger garlic paste saute well till raw smell goes.
  • Add  cooked baby corn saute for 2 minutes,then add cooked peas saute for 2 - 3  minutes.
  • Now  add ground paste and needed water, when it starts boiling add chilli powder,coriander powder and garam masala, and needed salt.Allow it to boil ,till it becomes thick paste.
  • It goes very well with Roti, chapathi's,pulav's,jeera rice and fried rice.
  • Note:if you want more spicy add garam Masala, else not needed.

Set Dosa - Set Dosai - with vada kari- Atukula Attu

Set Dosa is made with rice, urad dal and Poha. Poha(atukulu) makes the Dosa very soft and Smooth. Dosa texture will be Spongy and fluffy. it is also called by the name Sponge dosa.Set Dosa can be served with Vegetable Saagu, and chutney combination or it can be served with  Vadakari combination.Usually it can be served as two or three.

Ingredients

Idli Rice - 1 cups
raw rice - 1 cup.
urad dal - 1/2 cup.
Poha/Avalakki   - 1/2 cup.
fenugreek seeds - 1 tsp.

salt - to taste

Method

Soak idli rice,  raw rice, urad dal and fenugreek seeds  before 5 to 6 hrs of grinding.
Soak poha seperately.

Preparation

Grind everything  to gether, by adding needed water and salt.
Consistency should be moderate.
Allow it to ferment for 8 to 9  hours or overnight.
Pour the dosa and spread it like thick circular disc.Drizzle some oil. when one side is cooked flip the dosa, remove it  from tawa  when both sides are cooked.
Serve hot with vegetable saagu or  or vadakari.

Vada kari - Vada curry - for Idli Dosa Chapathi Appam & Idiyappam

Vada kari(vadacurry) is Multipurpose gravy which goes very well with Idli,Dosa, Parotta,set dosa   and chapati. Set Dosa with Vadakari is also a very good combinaton.  Vada kari is prepared with Chana Dal.I have explained  Vadakari with stepwise pictures.Chana dal is extremely delicious in taste, full of nutritious and can be digested easily.Coarsely crushed chana dal increases the nutritional value, which is ultimately beneficial for the health.Chana dal is low in fat and high in fiber and considered as polyunsaturated.Now we learn to make  Delicious Vadakari.




 
Vadakari


Ingredients

Pearl onion - 20.
tomato -1.
tamarind extract - goosebery size(amla size)
fennel seeds - 15.
bay leaf - 1.
garlic - 7 or 8.
ginger garlic paste - 1 tsp.
chilli powder - 1 + 1/4 tsp.
turmeric - 1/4 tsp.
cilantro - 1 tbsp (chopped)

To Grind

Chana Dal - 1 cup.
Fennel seeds - 1/4 tsp.
green chillies - 1.
salt - for taste.
cinammon sticks - 1 inch.

Soak chana dal  in 2 hrs of water.Grind fennel seeds,greenchillies,salt,cinnammon sticks for 5 seconds, then drain the chana dal that we  Soaked already and grind it into a coarse paste in a blender.

Preparation

Chop pearl onions,tomato and garlic into fine pieces and keep it aside.
Soak tamarind in water to prepare tamarind extract.

Method
Take a kadai add oil, when it is hot put the coarse paste(that we prepared already refer grind column) as dumplings into oil and deep fry it until it is cooked,as shown in the picture.[Need not mind the shape of dumplings]



Crumble the fried dumplings into pieces and keep it aside.

  •  Take a Kadai, heat the oil add bay leaves,fennel seeds,ginger  and garlic paste, saute it, then add pearl onions and  garlic saute well.


  • Add tomato saute well till mushy,add turmeric,chilli powder,saute well, then add needed water  add tamarind extract, when it starts boiling,  add crumbled dumplings that we prepared already.
  • Mix well.These vadas will absorb water, so add needed water according to consistency,add salt, stir well.

  • Allow it to boil till it becomes thick gravy.garnish with cilantro.

Note : it goes well with Set Dosa, dosa, chapathi,idli.

Crispy Rice Dosa - With left over rice - Annam Dosa

If you have rice left overs don't need to worry. you could make crispy yummy dosa's with rice left overs. This is an authentic recipe.




Ingredients
 
Raw rice - 1/2  cup.
Idli rice - 1/2 cup.
Urad dal - 1/4 cup.
Chana dal - 2 tbsp.
Cooked rice - 1 cup.

salt - for taste.

Preparation

Soak the rice  & dal ( urad dal & chana dal) for 4 to 5 hrs.

Method

  • To the Soaked  rice  & dal , add  cooked rice & salt.Grind it into a smooth paste, with needed water.
  • Consistency should be moderate.like our normal dosa batter consistency.
  •  Give a standing time of 7 to 8  hours. Then spread the dosa like we make normal dosa.

Thalicha sadam- Talimpu Annam - Tempered Rice(Andra Style) - Popu Annam

Popu Annam is a Andra style Tempered Rice. Popu Annam is a popular Tempered Rice in Telangana region of Andra Pradesh. Popu means Tempering and Annam means rice, so it is called Popu annam. It is usually made with rice left overs. Now we learn to make simple Tempered rice with rice left overs. 



 Ingredients

Cooked  rice  -  2 cup.
mustard seeds - 1/2  tsp.
cumin seeds - 1/2 tsp.
urad dal -  1 tsp.

chana dal - 2 tsp.
Roasted peanuts - 2 tbsp.
curry leaves - 1 sprig.
turmeric powder - 1/8 tsp.
Red chillies - 2.(broken into 2)
Green chillies - 2.
oil - to fry.
Onion -1.
Garlic -2.
salt - for taste.
cilantro - few.


 Preparation
  • chop the onions, garlic  and chillies  and keep it aside.


Method

  • Heat the oil, add mustard seeds when it splutters add cumin seeds, when it sizzles add chana dal,urad dal, red chillies, green chillies, curryleaves and Garlic,saute till dal's turns golden brown colour.

  • Then add chopped onions, turmeric and salt. Saute till onions turns golden brown colour. Then add cooked rice mix well. Garnish with fresh cilantro.
