Rice vegetable cutlet with left over Rice- cutlet - cutlet with left over rice

if you have left over rice, you could make cutlet  with it. Patties made with rice and blended with veggies, will taste awesome.This could be a delicious evening snack. I have noted  this recipe from my aunt's  cooking diary 10 years back. Today when i was reading my cooking book, i noticed this recipe, and i tried it. it came out well. so i wanted to share this recipe. Now we learn to make rice cutlet with left over rice.




   

                                               Cutlet With Left Over Rice

Ingredients

Cooked rice - 2 cup.
big onion -2.
cilantro[Coriander leaves] - 1/2 bunch.
carrot- 1.
beetroot - 1/4.[small piece].
potato -1.
besan flour - 3 tsp.
bread  -4.
chilli powder - 2 + 1/2 tsp.
salt - for taste.
garam masala - 1/2 tsp.
tomato juice - 4 tsp.
corn flour - 2 tbsp



Preparation


  • chop the onions and cilantro finely,grate carrot,beetroot,green chilllies and keep it aside.
  • Boil the potato,remove the skin and mash it.
  • Prepare tomato juice by grinding a small piece of tomato in a blender.
  •  Soak  the bread in water for few seconds, then squeeze it and keep it aside.

 Method

  • Take a mixing  vessel, add rice mash well with hands.
  • Then add everything mentioned in ingredients column, then mix well.

 
  • Make small balls, then pat it.
  • place the patties on tawa, drizzle some oil, when it cooked on both the sides, and it lightly turns golden brown remove it from tawa.

  • . Tomato ketchup add as a good combination to it.

Garlic pickle - vellapayaulu urugaya - poondu uruga

 garlic is a widely recognized health enhancing supplement. Garlic promotes the well-being of the heart and immune systems with antioxidant properties and helps maintain healthy blood circulation. One of garlic's most potent health benefits includes the ability to enhance the body's immune cell activity.The active component in garlic is the sulfur compound called allicin. Allicin is the chemical produced when garlic is chopped, chewed, or bruised. Allicin is quite powerful as an antibiotic and a potent agent that helps the body to inhibit the ability of germs to grow and reproduce. In fact, it's said that 1 milligram of allicin has a potency of 15 standard units of penicillin.There are now over 12 studies published around the world that confirm that garlic can reduce cholestral.

Now we prepare a pickle with garlic.



Ingredients
chopped Garlic -  1 cup.
tamarind - size of 2  small lemon size balls.
jaggery - 2 tbsp.
chillipowder- 3tsp.
salt - 3 tsp.
oil - 11/2 tbsp.
mustard seeds - 1tsp.
Preparation.
  • Prepare tamarind extract  with 1 cup of water.
  • peel the garlic and chop it into small pieces.

 Method
  • Take a Heavy bottomed vessel,heat the oil add mustard seeds,when it splutters add chopped garlic.
  • saute the garlic for 2 minutes.
  • Now add tamarind extract that we prepared already.
  • When it starts boiling add chillipowder,jaggery, and salt.stir well for few minutes until every thing combines and you get the form as shown in the picture.

Kovakkai Thovaiyal - Dondakaya chutney - Tindora Pachadi


 Dondakaya pachadi goes well with hot rice, with a dollop of Ghee.  Ivyguord is rich in Vitamin C, which helps in strengthening your bones and improving your body structure. It also has plenty of Vitamin B1 and B2, as also trace quantities of Vitamin A. All these vitamins are vital for the human body, and help in strengthening your immune system, and thus keep away diseases.Ivy gourd is said to be a brilliant bloody purifier and detoxifier, which thus helps in cleansing your body. It also simulates the liver, and clears harmful germs from your body.


  

Ingredients

Ivy guord[Thondakaya]  -25
green chillies -  4.
oil -to fry.
salt - as required.
tamarind - small piece. [gems size] 

Tempering

Mustard seeds - 1/2  tsp.
Cumin seeds - 1/2 tsp.
urad dal - 1 tsp.
curry leaves - 1 sprig.

Preparation

Chop the ivyguord into roundels  and keep it aside.

 Method
  • Heat the oil, add green chillies and saute  till it turns pale and  remove from kadai.
  • In the same  kadai,  add  ivyGuord, saute for 2 minutes in a high flame, then cook it covered, till is soft. Saute now and then.


  • Grind tamarind cooked ivyguord(dondakaya),green chillies and salt together by sprinkling little water to a coarse paste.Heat the kadai, add mustard seeds,when it splutters add  cumin seeds, when it sizzles, add urad dal and curry leaves, when dal turns golden brown add this tempering over Thovaiyal.


  • Now Dondakaya pachady is ready.
  • It serves very well with idli,dosa and rice.

Paneer Masala Dosa - Easy Paneer Dosa - Spicy Paneer Dosa



Paneer Dosa is a Popular Dosa Recipe in India.Paneer Filling inside Dosa tastes Delectable.Filling is made with Grated or Crumbled Paneer with some Spice Powders. This Paneer filling is made in Jiffy.This is a Kids friendly Dosa. Some health benefits of Paneer includes, Paneer is a high protein food having high level of calcium and phosphorus which helps in building strong bones and teeth.As it is the high protein and healthy fat diet, it provides better nourishment to the growing age children.It can be given to the children having allergy to milk in order to fulfill the nutritional value in their diet. For pregnant ladies its  good level of calcium and phosphorus helps both mother and baby to grow well and healthy.




Panner Masala Dosa


Prep Time : 10  min. 
Cook Time : 20   minutes &  2 - 3 minutes per dosa.

Serves  :  10 dosa. 


Ingredients

Idli Dosa Batter - As needed 
oil - to fry.

Paneer Stuffing


Paneer - 200gms( 1 + 1/2 cup)
Onions - 2.
Tomato -1.
Ginger - 1/2 inch.
Green chilli - 1.
salt - As needed.
Corainder leaves - fistful (chopped)

Spice Powders


Turmeric Powder - 1/4 tsp.
Chilli powder - 1 tsp.
Coriander powder - 1 tsp.
Garam Masala - 1/2 tsp.

To Temper

Cumin seeds - 1/2 tsp.


Preparation

  • Grate or Crumble the Paneer.
  • Chop onions & tomatoes finely.
  • Grate Ginger & slit the Green chilly.

Method


  • Heat the oil in the Pan, add cumin seeds,when it sizzles add Grated Ginger & Green chilly.
  • Saute  till you get good aroma from Ginger.(it nearly takes 2 minutes).
  • Then add Onions,Saute till it turns translucent.



  • Then add tomatoes, add all spice powders  Turmeric powder,Chilli Powder,Coriander powder   & salt.
  • Saute till tomatoes turns mushy. Add 1/4 cup of water.


  • When water starts boiling add Grated Paneer. cook for few minutes till water is absorbed.  Finally add Garam Masala. Give a quick Mix. cook for a minute. 

  • Finally Garnish with Fresh Cilantro.Now stuffing is Ready. 



Dosa preparation
  • Heat the tawa, pour a ladle of batter, and spread it in a cirular motion, drizzle some oil, when it is cooked well & turns crisp,  spoon with Paneer   stuffing.




  •  Fold the dosa.Remove it from tawa.serve hot & crisp .




Notes
  • For Perfect Dosa, take idli/dosa batter, add little water & bring it to pourable  dosa batter consistency.
  • Spread the dosa, thin not necessary to flip dosa, once it is cooked & turns crisp spoon with stuffing & fold dosa.
  • If it is a store bought paneer put in hot water for few minutes to soften them.
  • Don't fry Paneer for longer time else it turns rubbery.
  • Adding tomatoes,gives nice tangy taste to dosa.
  • This Stuffing also goes well with Chapathi,roti,phulkas & paratha's.

Vengaya karam - Ullipaya Mirigam - Vengaya karam

Vengaya karam is an Easy side dish Recipe made with onions. It Goes well with idli & dosai. I learnt this Recipe from my Aunt.


  

Vengaya Karam

 Prep Time :  5  min.  
Cook Time : 15 - 20   minutes.

Ingredients 

Onion -2 [Chopped]                                    
Red chillies - 4

Salt -as required.
fried Gram dal -  1 tbsp.
Tamarind - Goosebery size.
jaggery - 1/4 tsp.

To Temper

oil - to fry.
Mustard Seeds - 1/2 tsp.




 
Method
  • Grind Chopped Onions, Red chillies,fried Gram,Tamarind,jaggery,salt into a fine paste with needed water.
                                     
  • Now heat the oil, add mustard seeds when it splutters add this Ground paste.
  • Saute  now & then till raw smell Goes off & it gets thokku Consistency as shown in the Picture.
  • you can also refigerate it, for a week.

Quick and easy Ladies Finger Chips - Vendakka varuval - Okra chips




Ladies finger is a powerhouse containing vitamins A, B6 & C, folic acid and even protein. Lady finger is a good source of nutrition for sick people with diabetes, asthma, allergies, ulcers, cancer, etc. It is good for expecting mothers, for detoxification, and is even said to be an aphrodisiac.Now we prepare a quick  chips using ladies finger.





Ingredients

Ladies Finger - 200 gms.
Salt -for taste.
oil - to deep fry.
chilli powder - 1 tsp.

Preparation

  • Select the Smaller size ladies finger.
  • Wash and Cut the Ladies finger (vendakka) into round slices as shown in the figure.[cut and discard the crown]
  • Spread it in a clean kitchen  towel for 5 to 6 hours, so that sticky property will  go off.This is the important step in preparing this chip.
Method
  • Take a Heavy bottomed pan,add oil as needed.
  • When oil is hot, keep it in a medium flame, then deep fry the ladies finger till it turns golden brown and crispy.(it should maintain its crunchiness).
  • Now place a fried ladies finger in a container, add 1 tsp of chilli powder and salt , then  shake it for a while, salt and chilli powder will get evenly spread in chips.
  • Now chips is ready.
  • You can store it in air tight container and have for a week.
  • It will be a very good accomplishment for rice varieties.

Paruppu adai -lentil crepe -adai dosa


Dal or lentils is the staple food in every Indian home.We are going to prepare paruppu adai with all Dals.Steps are explained with pictures.It can be well understood even for the begginers.

   Dal is every man’s meal and one of the healthy dishes in  Indian diet.Dal is a best substitute for vegetables.Lentils are a great choice for individuals suffering from Diabetes or Rheumatoid Arthritis. Lentils also provide you with enough nutrition to satisfy your daily recommended amount of Folate, Vitamin B, Iron and minerals such as Phosphorous and Manganese. 
    Adai we are going to prepare is made up  of four types of lentils.It is very rich in protein.Now we start preparing adai.



Paruppu Adai
Ingredients

Raw rice - 1 cup.
idli rice - 1 cup.
dals - 1 cup.
(dals include Moongdal+chana dal + urad dal+ toordal)
cumin seeds - 1/2 tsp.
black pepper seeds - 2 tsp. [should have 60 seeds]
hing - 1/4 tsp.
curry leaves - 15.
ginger - 1 inch.
Pearl onions - 10.
fennel seeds - 1/4 tsp.
red chillies - 20.
salt - to taste.
Cooked Rice - 3/4 cup.

Ingredients to be added to batter
onion - 3 [medium size]

Preparation
 Soak  raw rice and boiled rice together for 5 to 6 hours.

Method
  • To the soaked rice add dhals, as such along with cumin seeds,black pepper seeds,hing,curry leaves,grated ginger,chopped Pearl  onions,fennel seeds,red chillies, cooked rice and  salt.grind it coarsely, like rava.[It is not necessary to soak the dal's]
  • Now the batter is ready. consistency should be moderate as shown in the picture.Add chopped onions to it.
  •  Heat the dosa tawa, pour a ladle of batter in the tawa and spread it in a circular motion as we pour normal dosa. drizzle some oil upon it.
  •  when it is cooked flip the dosa, drizzle some oil around the adai.
  • when it is fully cooked on both sides remove from tawa.It can be served with any one of these items such as idli podi,avial,jaggery,honey or  butter.
