Dosa Upma /Pappu Rotta - Dosa upma & its types

     Dosa upma or Pappu Rotta is one of authentic Vysyas recipes.Dosa Upma prepared from soft lacy dosa tastes yummilicious. In coimbatore many hotels sells this recipe and makes a great business.you can prepare it with left over Neer dosa recipe or  Kodo Millet Neer Dosa  also ,else you can follow the below procedure to make Pappu Rotta.




Ingredients

 To Grind 

 Raw rice - 2 cups.
 Coconut - 1/2 cup.
 salt - As needed.

 toor dal  - tablespoon.
 turmeric - 1/4 tsp.
 Green chillies or Red chillies - 4.
  salt(adjust) - required.

 Tempering
  
  oil -  To fry
  Mustard seeds - 1/2 tsp.
  channa dal - 2  tsp.
  urad dal - 1/2 tsp.
  curry leaves  - 10 leaves.

 Preparation

Soak Raw Rice for 2 hours & grind into smooth paste with coconut, needed salt & water & transfer it to  vessel.

wash the Mixie or Grinder with 2 cups of water, & transfer it to a Pan, & cook till it gets Porridge Consistency,then transfer it to vessel that has batter. Give a quick mix. Add needed water & bring it to Rava dosa batter consistency.






Method 
  • Heat the tawa, when it is hot, take the batter,in ladle and spread  it in outer corners of tawa.
  • Then fill inner gaps.
  • Drizzle some oil, when it is cooked and lightly turns crisp at the edges, just flip the dosa.Remove from tawa, when both sides are cooked.
  • Pressure cook  toor dal with 1/4 tsp of turmeric.
  •  Chop dosa's into small  pieces .(By using cutter or knife you can chop 10 dosa's within 5 to 10 min.) keep the chopped Dosa's aside). Now basic Rotta preparation is  Ready.
  • Add oil in a pan , add   mustard seeds,when it splutters add  channa dal, urad dal,red chilies,  curry leaves .
  • when dal's turn golden brown, add cooked   Toor dal with  1/4 cup of water.( Adding water, makes the mixture  thinner, so it get easily mixed with dosa Pieces.)

  • when water  starts boiling, add  dosa pieces, salt(adjust) ,mix well.Now Pappu Rotta is Ready.


  • serve the Pappu Rotta.

 Variations

                                        Tamarind Puli dosa using Instant Tamarind Paste
  
Heat the oil, in a kadai, add mustard seeds when it splutters add chanadal, urad dal, curry leaves & hing.  When dal's turns Golden brown colour add instant tamarind rice paste, add 1/4 cup of water, stir well,when it starts boiling add dosa Pieces and little salt.mix well.(tamarind paste may have salt so  adjust salt)

Ingredients
 
Tamarind Extract - Amla size

Coconut Grated - 3 tbsp.
idli podi - 2 tsp or chilli powder

Tempering
 oil -  To fry
 Mustard seeds - 1/2 tsp.
 channa dal - 2  tsp.
 urad dal - 1/2 tsp.
 curry leaves  - 10 leaves.


Dosa upma
 

Heat the oil in a kadai, add tempering items, when dals turns golden brown  colour, add tamarind extract with 1/4 cup of water , add idli podi , then add grated coconut, when water  starts boiling add dosa upma and salt, then mix well.Now tamarind dosa upma is ready. 

Neer Dosa - Neeru Dosa - Kobbari Dosa - With step wise pictures.

Neer Dosa  is  a popular Dosa variety in Kannada Cuisine made with coconut and rice. Neer means water, this dosa will be in water consistency and it is called Neer Dosa.Dosa will be soft at the centre and very crisp at the edges. Its called as poo-pole in beary language, and thellin dose in Kundapura Kannada (wikipedia).Aroma of this dosa,pulls you to eat .We learn coconut dosa with stepwise pictures.
         
Coconut is good for building up the body muscles of thin and emaciated individuals.Researches have suggested that coconut helps in reducing the viral load of HIV.The organic iodine content of coconut helps in preventing simple goiter (enlarged non-toxic thyroid).  Now we learn to make simple Neer dosa.

Prep Time : 15 minutes. 
Cook Time : 2 - 3 minutes per dosa .

Ingredients
Raw Rice          - 2  Cup
Grated Coconut - 1  Cup
salt                 -  for taste.

Preparation
  
 Soak the raw rice 4 to 5 hours or soak overnight. 




 Method 
  • Grind raw rice,grated coconut and salt  together with needed water.
  • The batter should be like rava dosa(like butter milk).stir well.Make  it  thin consistency.[if consistency of batter is thick,dilute with  needed water].



  • As shown in the picture,first fill the outer layer, then fill the inner one, then drizzle some oil, once cooked, flip the dosa, remove from the tawa when both the sides are cooked.



Note
  •  Fermentation is not necessary, once you make the batter you can prepare the dosa.
